Last night I had one of my one pan rice dishes.
I find they are a bit like stir-fries - you can have the healthiest ingredients going involved, but somehow end up with a mountain of food that undoes any sense of healthy eating virtue you might have built up when chopping the veg.
Anyway the one I did last night was not so healthy because it had a small bit of bacon in it, but alongside that was a little bit of diced chicken with lots of onion, garlic, red pepper, chilli flakes, peas, bit of white wine, long grain rice, paprika, chicken stock, saffron, and fresh parsley.
Tonight it's a late one of another sausage traybake - sausages, potatoes, red onions and tenderstem broccoli and a bit of gravy. I'm in a bit of a food rut over the weekend, have plans for Monday/Tuesday food but muddling through with whatever is available until then. I like a sausage traybake anyway so it's still a good tea, just a bit uninspired.
