What's for tea tonight? (#8)

I'm in day 2 of virus-land myself - what seemed to be a cold yesterday is now definitely something more flu or Covid like, as I have a moderate fever.

I have some mushrooms that need using, so might make myself some mushroom pasta or mushrooms on toast if I feel like eating later.

I found some fragments of an appetite albeit fairly late in the night.
A rummage in the kitchen produced half a white cabbage as well as the mushrooms that needed using, so I made a stew with those, onion, bacon, tinned tomatoes, and tinned butter beans along with chilli flakes, garlic and herbs.
It was very restorative. (I swear I could see my HP bar refilling as I ate it).
Managed to make a quorn and butter bean chilli using the other half of the onion/tin of tomatoes/tin of butter beans for N to have tomorrow as well.

Now hopefully my sense of smell and taste start to improve, because although I am sure my meal was delicious (and it was definitely warming and comforting!), I can't even smell malt vinegar or freshly ground black pepper at the moment! I have leftovers to have tomorrow, I might add some mince to it because not quite enough for a whole meal.

Last night was vegan pizza at the local open mic night; the base was amazing and the sauce/veg very tasty, but I couldn't get past the taste and texture of the fake cheese so didn't eat much. With hindsight, we should have just ordered it cheeseless.

Had a bacon sandwich when I got home :oops:
 
Been eating Ital Stew all week, having the final bit tonight.

shakespearegirl this is what I done on Sunday, it’s not exact or anything.

2 white onions
6 garlic cloves
4 carrots
4 sweet potatoe
300g yam
2 plantain
1 big thumb of ginger
Approx 40g of creamed coconut
100g Kale
2 tins of chick peas
2 tins of red kidney beans
3 whole scotch bonnet
1 lime
Season all
Cpl of sprigs of thyme

Cut all the veg into 2cm slices.
Strain the chick peas and kidney beans.
Finely slice the ginger and garlic and make into a paste.
Tear the kale into pieces.

Big glug of oil in the duchy pot.
Add the onions and fry until soft and golden.
Add the ginger/garlic paste, allow to fry for 30 seconds or so.
Add all the veg including peas/beans.
Add the scotch bonnet.
Add boiled water until all ingredients covered.
Simmer for approx 30 mins.
Add the kale, thyme and season all (to preference).
Squeeze lime juice in.
Continue to simmer until everything is soft and the texture to your liking.

The second half of my soup/stew type thing from last night - there's not a full portion left but I have some pork and beef mince in the freezer so I'll fry some of that off along with a pointy red pepper that I got on yellow sticker this afternoon, and I found a potato which I'll cut up and soften in the microwave before adding.
Plus a bit of baguette with butter.

Feeling a bit better today, hopefully I'll have more of a sense of taste when I come to eat, I could taste a bit of it last night just not as strongly as I usually would. Hopefully I didn't overdo the seasoning last night trying to overcompensate!
 
Freezer foraged goulash left by my mum with a sticker saying 'add meat, paprika and stock' which made me wonder what was actually in it :confused: Repurposed with some chilli, beans and tomato and eaten with rice and guacamole. Worked out well, if a little bit random. Thanks mum!
 
Grocery delivery day, have all the ingredients for a Bolognese which I love but haven't had for a while.
Not sure yet what pasta I'll be having with it - I think we've got spaghetti, linguine, tagliatelle, fusilli, and penne in the pasta box. Will probably go with a long pasta tonight, then penne or fusilli tomorrow for a Bolognese pasta bake :)
 
Went to M&S with mum today. Decided I’d treat myself and El Jugs to something nice since I cooked for mum yesterday. They had samphire, not had it for ages. Got cod loins and there were salad potatoes left over from yesterday so I sliced and baked them, baked the cod, samphire in a dish with lemon and olive oil. Hey presto - food wanker fish and chips!

Have to say I'm not a massive fan of samphire and would probably sub it for spinach, but the rest of it sounds lush :)
