I suspect the answer is probably Italian specialist delis and not as cheap as one might hope for a bit of what is essentially cured spare pig cheek scraps

Yeh I ended up with a massive amount of Mexican specialist ingredients this way before. I think 10kg of jalapeños was overboard to start with.Good plan, leave it in the basket and revisit tomorrow when sober and not in the first flush of excitement about sourcing a new ingredient
