What's for tea tonight? (#8)

Really fancy a curry now.
We’re having a possibly misjudged reduced purchase of tandoori flavour burgers. :hmm:
They seemed like a good idea at the time but we’ll see.

How do you air fry your veg? We haven’t tried this yet.
We fill the drawer with chopped up veg, sprayed with some of that fry light. We season and add dried herbs then give it a good shake. There's a vegetables setting on ours but you can do it manually. 180 degrees for 25 minutes with a shake half way through.

Veg cooked with a slight crisp, and lovely condensed roasted flavour just right for turning into pasta sauce. Highly recommend!

I don't know what I'm having, I CBA and am pissed off about yet another bank holiday weekend where I'm too ill to see anyone or do anything fun (I don't really feel that ill any more but need to be careful not to set it off again). I got my Sainsburys order but don't feel inspired by anything in it and I don't want a takeaway.

Will probably just get some wild garlic pesto out of the freezer and have that with pasta and broccoli.

I got over myself in the end and had one of the salmon fillets from my delivery, dusted with flour and dukkah and fried up with the remains of last night's new potatoes, plus some salad and lemon squeezed over.

It was actually really nice.

Cor... sounds lush! Been ages since I had salmon, will have to soon I think, that's proper made my mouth water!
 
It's mostly boredom and FOMO at this point. It's a long recovery process of gradually doing stuff again and it may well take a few months before I'm able to really get out and about and socialise again confidently. Hard to predict.

Anyway tonight will be the second salmon fillet in some form.

I completely understand that - I mean different reasons but my recent bout of gastric virus type thing and a quite severe attack of MH issues especially anxiety means I have not really been enjoying this beautiful spring weather as much as I ought to have been - oddly I spent most days in winter going out for a walk even if it was a bit parky, and now the sun's come out I'm pulling the duvet over and can't face the world.
I hope you have a swift recovery and are able to be out and about soon
 
The tandoori lamb burgers last night were actually alright but still seemed a bit of a weird combo.

Mr Looby will be lateish back from football today so he’s buying a takeaway. I’ve been craving a peshwari nan for ages so I think curry. I’ll just have sides and bread I think.

Sides are often the best bit of the menu when it comes to Indian takeaway - aloo gobi, tarka daal, garlic naan and some mushroom fried rice for me please!!! Oooh and maybe some onion bhajee and raita

Chicken and walnut stir fry with lots of bean sprouts, onions and grated carrots.
It's really tasty and I've not cooked it in ages.
 
I'm not great at measurements...tend to just throw stuff together and taste.
I use orange juice (warm it in the pot)
Then add in a few squirrs of tomato ketchup and a good shake of vinegar. Then I add honey and taste it ..if its ok I add pineapple chunks and grated carrot( actually I use a potato peeler to scrape shavings off the carrot ) i tend to throw in any veg that's around. (Sweetcorn or red / yellow pepper) and then taste again. I'll adjust the taste with either vinegar or honey / sugar. I like it quite runny but if its too runny I add cornflour / water mix.

Made fish tacos for the first time, very nice! Tortilla wraps as couldn't be arsed to buy actual tacos, made a crema and a chopped avocado/tomato/red onion/spring cabbage/black bean salad thing and bunged it all in the wrap together :thumbs:

I keep thinking I should get more into making Mexican style food. But I don't.

I make quite a lot (mostly probably not authentic at all) largely because it's quick and cheap plus spicy enough for kid 1 without being so flavorful that kid 2 refuses it :facepalm:
