What's for tea tonight? (#8)

Trying to wean myself off dessert, but I found a sealed bag of bulgar BBF 2019 - but no visible insects.
No soy milk but unfortunately I have sugar :p

EDIT :- it tasted funny so I've resorted to peanut butter on toast ..

I think quite a lot of us here are fans of cottage pie (and all its related variants!) :D

No cottage pie for me tonight though, I bought some chicken thighs earlier and some yellow stickered new potatoes and I am a bit short of time and have to be up in the morning (environmental shift on Tuesday this week what with Friday being a public holiday) so that sounds like a traybake to me. I have some mushrooms that need using but they aren't going to withstand being in the oven for as long as the chicken so I'll probably just fry them in some butter and pop them on top of the rest of it when I am serving up.

Chocolate for afters.

The traybake thing has been a bit of a recent revelation for me, but it's made it considerably easier to get some healthy food into my OH while he is on nights as I can just leave a roasting dish full of stuff for him to put in the oven when he gets in, he doesn't have time or energy for anything more onerous and I often lack the desire to cook (or indeed eat) a meal for both of us to enjoy together at that time in the morning. I mean I do sometimes fancy it, and sometimes I'll make a big pot of dal or veggie chilli for him to heat up for a couple of meals, but traybakes are great for other times, or for when I lack energy myself.

Yeah - you're right.
I've probably been making a variation of these for several years without putting a name to them!!
 
I use boneless chicken thighs a lot. They're great for curries (and tray bakes), and a lot cheaper than breast.

I get the bone-in skin-on ones regularly, I bake them and get lovely crispy skin (which I love!) and the flesh stays moist. Great for a mini-roast for one.

£2.20 for a kg (usually 6 thighs, which with plenty of veg is a decent 3 meals) in Morrison's, so a good choice for a tight budget.
 
Freezer-foraged 3 bean chilli, with brown rice, sour cream, and a slathering of grated mature cheddar.

Second half of a yummy Hotel Chocolate extra-thick easter egg with truffles in it, that the fella got given by a client :thumbs:

OMG that sounds amazing, I love Hotel Chocolat stuff and sometimes pick up reduced price stuff - this is a good reminder to go and have a look right after easter ;) :D

EDIT: Should not have looked at their website, seriously salivating now!
 
Home made giant beef meatballs fried and then baked in the oven in onion gravy.
Mashed carrots, parsnips & turnips.
Brussels sprouts boiled an then pan fried in a drizzle of honey with walnuts. The walnuts got lovely and caramelised.
Potato croquettes.

Stuffed now I am 🙂

Ok folks - pretty boring..
Roast chicken breast
Baby potatoes, carrot, swede, leek and red onions
Red wine
Might round it off with some chocolate chip Madeleines from Lidls - 16 in a pack !!!!!!!
Bonne Mamans's only have 7 in a pack
Pepys - you should be living in such times!!
