What's for tea tonight? (#8)

My chicken breast did not defrost in time for me to do my roast thingy last night so am doing it this evening instead.
 
Last night we had a Chinese delivery. I had crispy chilli beef and mini spring rolls.

Tonight we’re meant to have mushroom and Camembert pies, new potatoes and veg. I’m not totally sure I fancy it but I think Mr Looby does so I’ll just suck it up. As long as there’s a massive plate of roasted broccoli, I’ll be happy.
 
A jacket spud with some quorn bolognese from a night or so ago on it.

Or beans and cheese. Maybe a veggie burger or something with it. Or something.
 
I just didn't have the physical or mental energy (for the 2nd night in a row) to do my sausage stuffed bacon wrapped chicken breast with all the roast dinner trimmings - I didn't want to go hungry though so I used the chicken breast and 2 rashers of the bacon and some other bits & pieces to make chicken, bacon and mushroom orzotto - easy 1 pan comfort food at its best really.

The sausages and the rest of the bacon (which were both yellow stickered) were portioned up and put in the freezer.

I need to stop thinking that I have the energy to do massive cooking projects all the time, OH's schedule of night shifts is really starting to get to me (he's been on 5 or 6 night shifts a week for more than a year now), maybe I am not fully recovered in terms of energy levels after Covid last month and usual fatigue plus general sense of ennui etc. means that I can start the day with grand plans for dinner that don't come to fruition!

I need to aim a bit lower, eating something simple is better than getting overwhelmed and not having the energy or wherewithal to cook whatever fancy dish I woke up thinking I wanted.

EDIT: And maybe tomorrow I'll get around to doing the rice pudding I've been hankering after for days - really all it requires is for me to put a few ingredients in a dish, stir it all, and then bake it on a low temperature for a couple of hours, it's not exactly labour intensive and it might cheer me up a bit.

Actually yes, I was wondering what I was going to have tonight, I'll get a couple of sausages out of the freezer, I have potatoes, peppers, onions, garlic, bit of thyme. Oooh chilli flakes I reckon.

Thank you for posting about your tea, that's sorted me out and it's going to be nice and easy to prep and cook even though I feel tired.
 
Also if I just cut double the amount of veg and defrost some of OH's veggie sausages too I can put his all in a dish and all he needs to do when he gets home in the morning is heat the oven, bung it in, and scoff. Excellent call.

Potatoes, coley fillets, cherry toms, green beans (not my first traybake choice, but they need using up), lemon juice + herbs, maybe parsley, or perhaps lemon thyme if I can find any.

I know the feeling - I'm often completely brain tired by the evening. I make a meal plan now and order everything on Sunday night to be delivered on Monday. I always make sure there's something frozen that we can bung in the overn, incase I've run out of energy. I'm looking after dad til Sunday so the slow cooker is getting some hammering. Dad loves slow cooker dinners, it took some tinkering to make things that were tasty and not swimming in liquid, but I've nailed it now - I dust the meat in flour, I brown that and the onions before I load it up, I don't put the liquid in so it's level with the top of the veg, I leave about an inch, because invariably the cheap cuts of meat we always use are full of water. I prefer cooking on high for 5 hours rather than medium for 10, there is more depth of flavour, but I can prep it in the morning when my brain still works. I like doing these dinners for dad (who is prone to high blood pressure) because I can use sodium free stock cubes and no other salt and you can't tell. Tonight we had pork, apples, celery, swede and carrot stew with pearled spelt (I can't eat pearled barley I'm intolerant but this is lovely). Two portions left for the freezer. Won't be slow cooking tomorrow but I make an Irish stew for my parents every Thursday. Was supposed to be cooking a Lidl stir fry that mum left for me - the use by date was 18 March. Oh mum.
 
I proposed the idea of tray bakes to OH as something I can prep for him, using whatever veg I am doing for myself in the evening so it's very little effort for me, ready for him to bung in the oven when he gets home in the morning - we're going to give that a go as it sounds like a good easy option.

He's knackered when he gets home in the morning and on days when he has consecutive night shifts (which is most days) he doesn't get enough sleep, so if it was solely left up to him he'd live on frozen pizzas and salt fish patties - so this could be a solution so he gets at least 1 meal (involving veg) a day while he's working.

He's opted to try a fish one in the morning which is no bother - same veg as I am doing for my sausage one tonight so I can get it all put together as I am doing mine, and I'll defrost a fish fillet that he can bung in on top halfway through the cooking time.

Thank you for the ideas mrsfran and BoatieBird - this could be a really good option for feeding us both easily when we are eating at different times. When I have more energy a big pot of veggie chilli or curry or a pasta dish that he can reheat when he gets home is fine, but the tray bake thing is a great idea for when I have a bit less energy.
 
I love traybakes, I saved some from Pinterest, do a search for sheetpan meals. But the cooker here at my parents needs chucking out, it has only one temperature - nuclear. It’s ancient.
 
Greek lemon chicken and potatoes (this is another bung it all in a dish and put it in the oven one!)

I'll be using skin-on, bone-in thighs which are perfect for this recipe, it's cooked in stock and lemon juice with a lot of garlic and herbs which all reduces down to a lovely richness and lets the potatoes and chicken skin crisp up on top with lovely lemony juices at the bottom. I'll be adding onion, peppers, and maybe some green beans too (ooh, black olives perhaps).

I'll prep a chicken-free version for OH to have in the morning (he loved his traybake this morning so full steam ahead for more meals along similar lines, my sausage one was fucking lush too and my only regret was that I didn't make a bigger portion :oops: ) and he can pop a basa fillet in the dish for the last bit of cooking time.

Bbq mushroom burgers on sourdough baps, with a slice of toasted cheese on top, with wedges and a rocket salad. Would have preferred little gem or iceberg but it's like fucking Russia again in the local Co op :rolleyes: If you leave it til the afternoon to go in, there's fuck all left.

Sounds lush!

Our Morrison's has been like that lately, leave it too late in the day to do your shopping and there are a lot of empty shelves.
