What's for tea tonight? (#8)

Greek style chicken and potatoes (skin-on chicken thighs and potato chunks coated in olive oil, lemon, herbs and garlic, then roasted)
Mushrooms in a herby, garlicky, tomato sauce
A salad of some sort maybe involving olives and feta
Hummous & tzatziki
Bit of baguette

I'll also be prepping some stuffed peppers with potato wedges and a spicy chilli/tomato sauce for OH to put in the oven when he gets home from work in the morning, with salad/hoummus/tzatziki/baguette on the side. The stuffing for the peppers will consist of: Rice, carrot, courgette, celery, mushroom, onion, garlic, tomatoes, tomato puree, herbs - topped with a bit of mozzarella and cheddar. There will probably be enough rice for a few rounds of stuffed peppers so I'll freeze the leftovers of the stuffing for next time.

Well I got dinner half-prepped last night but was feeling unwell so put everything in the fridge and went to bed - will finish off cooking it tonight instead.
 
Just bought a kilo of octopus for 10 euros off this van that pulled into the cafe car park. It’s 15 euros at the fish stalls. Won’t cook it tonite but I’ll look up octopus rice for a future tea time meal when I’ve got guests .
 
Really depends on whether OH is interested in eating in a couple of hours, he's now feeling a bit rough and is sleeping.

If he wants something, I'll do sausages (pork for him, quorn for me) with potato and courgette mash, sweetcorn and gravy (possibly involving half a red onion that needs using).

If he doesn't, I'll probably have a rethink.
