What's for tea tonight? (#8)

I've not eaten properly in ages, tonight I really must make an effort.

I've defrosted some chicken and am planning on a chicken and cashew dish (like kung pao but with cashews instead of peanuts) and some veggie chow mein type thing - I have mushrooms, peppers, onion and celery to go in that. I like rice so much though that I may have some rice too. I'll make plenty of the veggie noodle dish so that OH can reheat some when he gets in from work in the morning.

I'm feeling very tired after a few disturbed nights of sleep and general upset/anxiety so it might slip to being more toward breakfast time if I end up asleep.

Yesterday it was takeaway pizza from a being going for years Italian place. I had a medium half n half with one side mushrooms & the other veggies plus pineapple & black olives. I usually just have the it veggie & my partner kindly gives me a slice of his large mushroom with extra mushroom. I will revert back next time.

Tonight was lentil cottage pie which was just perfect.

I had dirty KFC. Despite a commitment to healthy eating and a fridge full of veggies etc and a meal plan.

Mr Looby is out at football and I had a shocking day so I definitely wasn’t cooking.

Chippy tea! We're off round me Ma Out-Law's, so treating her to a fish supper

I'll be having one too, and the fella will no doubt have a cheese pie, chips and mushy peas.

No idea what's for pudding. Might take my own decaff teabag with me though, can't be having caffeine at tea time, I'll never sleep.

I did end up going to sleep and doing this for breakfast instead, as OH is still on nights I defrosted some prawns for him and did him some sichuan prawns (with whole dried chillies, fresh red chilli, sichuan pepper, red peppers, spring onions, ginger, prawns, garlic), the chicken & cashew dish for me, and veggie chow mein for us both and we had it this morning (is it breakfast, is it tea, who knows?).

I have some of the chicken dish and some of the chow mein left over for tea later (so it deserves mention on this thread anyway), will just throw it all in together and reheat for scoffing when I feel like it later.

I had a post dance class no-cook tea of posh supermarket pizza pimped with nduja sausage and a big salad for health. Also I really like salad as long as it's properly dressed. It was a new-to-me posh brand of packaged pizza called Crosta and Mollica, which I can recommend.

Tonight is sesame and ginger meatballs with pak choi, chilli and rice.

Any ideas for curly kale? I'm not a big fan and deliberately chose a veg box this week which didn't have it - only to find they'd replaced the Swiss chard with kale.

I am not a fan of kale either, I'd be inclined to make a soup for the OH with it because he likes it :D

Just don't try to make "crispy seaweed" with it in an air fryer, stick to the oven, it is safer :D

I do this with kale: Anna Jones’s kale, tomato and lemon magic one-pot spaghetti but I love the stuff, so might be a bit too kale-y if you're not a fan.

Black miso sticky rice with sprouts and peanuts - slightly dependent on a delivery this afternoon though. Otherwise it might be confit tandoori chickpeas with flatbreads. Both Ottolenghi recipes, for he is god.

I'll have to look up those recipes, sounds good. I can't do peanuts but cashews are often a good substitute, if a little sweeter.

I'm cooking loads with cashews these days. Don't know why I never thought to cook with them before, they are a kick-arse form of protein, taste amazing with a little char on them (bunged some in the stir fry last night too), and are soooo satisfying.

Why can't you 'do' peanuts?

Deathly allergic.

I used to love peanuts, but started to develop breathing problems when I ate them, so stopped eating them which seemed the most sensible option rather than waiting to see if I ever went into full blown anaphylaxis.

I do love cashews, especially in stir fries with chicken - I just toast them briefly in a dry stainless steel frying pan then put to one side while I cook the rest of the meal and add them back in at the last minute. They go well in rice too, fucking lush.

Isn't it weird how one nut is deadly and t'other isn't?! You'd have thought it'd be all nuts.

Lasagne from scratch and garlic bread (small one said euwwww what's that? I said Lasagne and was told "I don't like it!"🤦‍♀️) i cut it up in her bowl and said its pasta, she scoffed it. 🖕🖕🖕

Tomorrow is a chicken casserole I got a stew pack free at work and i am at work all day. Because the veg is all a bit sweet (parsnips, swede, carrots) I have whacked a lot of dijon mustard in to balance it out a bit.
