Went with the madras in the end and it was phwoarrr!Can't decide between potato/sugar snap pea/babycorn/toasted cashew madras with brown basmati, orrrr red pepper/babycorn/ss peas/chestnut mushrooms/egg noodie chow mein stir fry.
Chicken thigh, new potato, courgette, leek, pepper, pea and fennel traybake.
I'll either put some olives and capers and tomatoes in and make it Mediterranean-ish or I might marinade the chicken first in some kind of oil/herb mix - thyme, mixed herbs, that sort of thing. The important ingredient in the traybake as a whole is sea salt, liberally sprinkled.Oooh nice, I am a very recent convert to fennel so will be looking a bit more like this ❤ . Any herbs or anything?
