What's for tea tonight? (#8)

Why don't you have a fridge?
I kept breaking them and I live 100 yards from a supermarket so it's not worth the electricity just to make my broccoli last two days.
Apart from that, there's just my sugar-free marmalade that ferments so quickly.
And it's only a slight inconvenience for 6 months of the year :)
 

It's this one -

Lemon curd marble muffins

- the lemon curd version (with the ground almonds added in place of some of the flour) is one of my absolute favourites :cool: and they're dead easy/fast to make, too - but we fancied something different so used 75g of frozen cherries, which I chopped in half. I also added a bit of vanilla AND almond extract (as well as doing the ground almond swap - that bit is right at the top of the page and not within the recipe itself, in case you miss that! It's just replacing 100g of the flour with 125g of ground almonds).
A Google search told me that, first off, I didn't need to bother defrosting the fruit and also suggested putting a little of the cake mix into the bottom before (very gently!) mixing the cherries into the rest of the batter and topping up with that - and we didn't get any sinking fruit.
 
We're away, staying in Devon with Mr K's parents plus brother/sis in law/niece. There's been a lot of (very good) fish and chips etc. It was our turn to cook tonight, so I made courgette and pea risotto for the grown ups plus chicken goujons, boiled rice and broccoli for the kids. It all turned out perfectly and all at the same time too, a first :D Shop bought chocolate brownie pudding for dessert.
 
Quick shameless busy dinner....but let it be known, i try to put a bit of style on it!!

wholewheat spaghetti with garlic oil, toasted pinenuts, chilli flakes and thrown on garlic oil. Grated extra mature cheddar on top. On the side: tinned pink salmon fast mixed with mayonnaiise, olive oil, dill, squeeze of lemon juice, grinded black pepper cos i feel guilty about doing a bad dinner, and grated lemon peel :thumbs:
 
Freestyling tonight. Boiled the fuck out of the remains of last night's chicken carcass in the pressure cooker after rescuing the remaining chicken.

Doing a stew in the slow cooker with the stock, chorizo, chicken meat, beans, pearl barly. I'm now worried that although I soaked the beans over night and they are spending the day in slow cooker they may still be hard. Should have blasted them first.
