What's for tea tonight? (#8)

Roast chicken this end, with soffrito (tucked underneath), mashed spuds and homemade parsley sauce. I'm so loving the look of the fresh green parsley.
 
Got the fella's lad round for tea. He's now got diabetes, and absolutely everything I thought of to cook for him was a huge No No :(

So we're having a mushroom, onion, chickpea and spinach curry, made with a jar of tikka masala paste, and brown rice *retch*
