What's for tea tonight? (#8)

Oh god it really was. Every time I have that I am amazed by how impossibly lush it is. I had loads of leftovers for lunch too! :cool:

Last night I hit my overdraft hard and remember having a dinner of many, many, many pints followed by a giant posh salami pizza and a bowl of calamari, then more pints.
I feel somewhat....tender.

Well, I was gonna risk my extremities tonight and make my own dolphinose using my much-neglected-yet-brand-new-mandolin, but Lady Luck smiled upon me and lo there were two containers of it going cheap int Coop!

I did have a massive hankering for a fennel and potato bake but couldn't get any fennel :( Probably too late in the year.

Aaaanywayyyy - yeh, potato dolphinose, Cauldron Lincolnshire saussies roasted with quartered onions, roast vine tomatoes, and cauliflower. Rahhh - fuck me, can't wait!

Plenty red medicine first though :thumbs:
 
salmon, pollock and shrimp with sweetcorn in a homemade fish pie. Seved with mixed veg.

The pie is a china dish with a shortcrust lid (no pastry side :(

Got a recipe for the ragu Maggot ?

It was an HFW one with my own adaptations:

Ingredients

Olive oil
Butter
1 large onion finely chopped
500g Mushrooms, washed and thickly sliced
3 cloves garlic finely chopped
A sprig of Thyme (not essential)
1 tablespoon balsamic vinegar
Small glass of dry white wine
dollop of creme fraiche
salt and pepper


  1. Put some oil and half the butter in a large frying pan add the onions and fry until they are nearly soft. Add half of the mushrooms and cook, stirring often, until all of the liquid is released has been evaporated and the mushrooms start to caramelise. Remove from the pan and set aside while you cook the remaining mushrooms.
  2. When the second batch of mushrooms are almost done add the first batch to the pan along with the thyme leaves, garlic and balsamic vinegar and cook, stirring, for a minute or two.
  3. Add the wine and cook until most of the liquid has evaporated before adding the cream or creme fraiche. Season with salt and pepper and serve sprinkled with fresh parsley.

What i should have had last night.

Spicy chicken drumsticks, roast potatos and half a garlic baguette
 
Tuna and sweetcorn pasta and 4 vodkas and cokes round at mates, a tedious bus journey home, then thai prawn fishcakes and some stuffed red pepper from the tramps buffet for 49p reduced from 2 quid, fishcakes were nice, the red pepper was disgusting, must have been off or something.
 
Takeaway, pizza or a calzone, not decided yet.

Tomorrow i am having another bash at the lamb biriyani i made a balls of last weekend. I waint be beat.
 
Vegetable madness for me today.

  1. A pea & mint salad with goats cheese;
  2. A blueberry, kale, beetroot, spinach, blackcurrant and apple smoothie;
  3. A summer vegetable salad with basil and mint dressing;
  4. Half a kilo of baby plum tomatoes; and
  5. A big wodge of mature cheddar.
