What are you having for breakfast?

I had scrambled eggs and mushrooms. Our local Mozza's has started putting out marked down veg in the morning, for as cheap as 20p, so I go in at 8 and stock up. Saving me a fortune and we're eating a lot more veg. I am still waiting for the final '4 for 20p' avocado to ripen, it's taking days!

It's in cups, but you can find a conversion chart online I'm sure.

I don't put cardamom in, I use dried ginger instead, and I prefer mixed seeds. Don't bother with coconut flakes either - it's a mix n match/whatever you have in kind of recipe anyway. Couldn't be easier! I usually put a squirt of maple syrup over it when it's in the bowl too, cos I have a sweet tooth.

Hotel breakfast -
A yoghurt and granola bowl
A toasted bagel with scrambled eggs and grilled tomatoes.
Orange juice and a little banana and pineapple smoothie.
A cup of tea and a pain au chocolate.
I'm fit to bursting but I don't plan on eating till 8pm

There's a pancake station though. :hmm:

4 scrambled eggs and an avo, piled up on a single piece piece of grainy toast.

Juice of 3 limes and a lemon, honey, pinch of pink salt and water in a 2 pint tankard.

Roll one up for the bike ride and dash out the door. Snacking on cashews, keeps me going til at least 4.19pm when its time to knock off.

This is pretty much my routine if I'm doing highly physical but low risk stuff.

I find the texture is more to my liking.

And I use a huge bowl so it doesn't overflow

Yea I'm happy for chef Mike to cook my oats. Massive bowl for sure. I also thicken and water them down (with milk since im a heathen and not properly Scottish) 3 times over, takes about 7 mins with rest time for that soft and creamy readybrek appeal before giving it a good dollop of honey or nutella like a proper wrongun.

You don't really need a recipe for muesli. I go roughly 50% oats, 50% everything else: dried fruit, nuts, seeds, coconut flakes, whatever you fancy. I usually include: seed mix, raisins, chopped apricots, brazils, walnuts, cranberries, coconut flakes. Banana chips are nice but a mistake if you're going to soak it. 🍌

Today I had what a friend calls porridge pancakes: apple and oat pancakes with Greek yoghurt, raspberries and maple syrup.

Do you toast yours in the oven?
