'Bleeding' vegan burger is an 'existential threat' to beef' whines NZ MP

Fermented soy is meant to be superior, bt i've never seen it on sale anywhere. personally i don't see the point of eating it as I'm not a vegan. There are, I think, some issues. Whether they live up to the bullshit spouted by the Paul Joseph Watsons of the world is another question. Besides he peddles Alex Jones' brain pills.

I use miso paste in cooking quite a lot, including sometimes when cooking stuff that has meat in it.

If I remember correctly, miso soup is what Kikunae Ikeda had in mind when he coined the term "umami".*

I use soy milk, yoghurt, tofu, miso, shoyu and tamari.
I buy tempeh occaisionally, but have yet to justify the high price.

I'm hoping to get into gourmet fungi later, so perhaps will make my own soy milk and use the left over "okara" for tempeh ...

I hope to model my future diet on Okinawa - though with sefood in place of pork.
 
Enzyme tip of the day.

There is a much-perpetuated tinfoil hat myth that microwave cooking (specifically) destroys nutrients - in particular a chemical in broccoli and other crucifers called sulphurophane that has been mooted as having anti-cancer properties.
The truth is that ALL cooking destroys this - so frozen broccoli is deficient before you even get it - even blanching will do this.
The chemical is produced by the plant in response to insect attack and what is ACTUALLY denatured by cooking is an enzyme that does the magic.

So, although it may be aesthetically damaging, the secret is to chop the broccoli up fine and leave it for 20 minutes for the chemistry to happen. The sulphurophane is tolerant of cooking - and microwaving is potentially the kindest form of cooking for all nutrients.

Of course you could also just whizz it up raw - and broccoli sprouts have the highest level.

From my research, I am happy to call cruciferous green veggies genuine "superfoods" and I try to eat some every day.
 
I'd never heard of a soyboy. It was interesting. A bit like the final insult that you would use if your ego was so fragile that it was in danger of crumbling completely and being sucked up by your own arsehole.

It's also a sign (imo) that things are changing and that a certain section of meat eaters is feeling threatened.

I think it’s also that a good portion of what we might call the “alt right” needs to define itself in opposition to anything they perceive the “other side” as doing, or not doing.

It's certainly got links to it, all that fetishistic love of steak and rugged man the hunter or weightlifters after the protein kick.

I think it was that C4 Eden program where 4 or 5 lads got together and into a very toxic headspace of "hunting" and meat eating and bullying.

And as a meat eater I fucking cannot tell you how much I abhor that culture. It sickens me to the core that the alt right/alt light brigade have found diet to be a new frontier to spew their bigotry from.

It is odd. Some people do go to some great lengths to tell you in detail about the no-doubt imaginary steak that they will be eating for dinner as soon as you mention tofu or quorn. I cannot imagine interrupting a conversation between meat eaters to tell them about my anticipated spicy beanburger, paying special attention to the way it's slightly undercooked and really, really beany mmmmm. It was growing in a field less than a month ago. Mmmmmm :confused:

I like spicy bean burgers (Morrisons or Tescos, only a quid for four) but cook them for five or ten minutes over so they're crispy. With cheese.
 
A bit iffy since there's a health disclaimer for the pea protein ...
