What's for tea tonight? (#8)

my best mate emma unexpectedly got a job today after being unemployed since christmas, so i invited her over for tea to celebrate, forgetting i was skint and had a fairly empty cupboard. however! i managed to scrape together:

salad nicoise

and rhubarb fool, with ginger nuts.

and a bottle of rose. all good. :)

ended up in 2 different wetherspoons last night  Tried to be healthy in the first one and had some pasta with 'superfood' roasted vegetables. In the second pub, I ended up eating all my boyfriend's chips :hmm:

I need some inspiration for meals that don't need an oven, hob or microwave :-( I have a toaster and a kettle at the moment and am sick to death of stuff on toast! Any ideas?

Instant noodles with the hot water.
You could poach eggs with water from the kettle but they'll take longer.

Nommynomnom - tonight's tea will be penne in a sauce made with chestnut mushrooms, garlic, spinach, and mascarpone - which I can never see without hearing Prince Buster go 'Al Capone!' :D Although I might try and get some different pasta actually - penne seems a bit too chunky for this.

Hope your ma is ok NVP

Crustychick - varieties of cheese, with salads, and, as Bee says, couscous?

Hoummus? With nice breads, and salad

Ooo roll mop herring, or other fish/seafood, again with good breads/salad?

thanks guys! will try some couscous for dinner - I'm just a bit stuck that I can't cook anything to go in it, which I'd normally do. And maybe I'll attempt egg on toast for lunch. wish me luck! or, the other way round - WILD TIMES!

Last night we had celery stir-fried with cashew nuts; tofu stir-fried with leeks; and bitter lettuce with slivers of beef. Tonight we're having cajun chicken stew and brown rice.

It doesn't quite rhyme though

I can't help but say mascarpone like Freddie sings Barcelona, only in my head though  :D

crustychick ...I was going to say Bulghur wheat...but you could also do glass noodles and make a Vietnamese style dressing..fresh chilli/chilli flakes/soy/lime juice/sugar...with some shredded Chinese leaf and carrots, beanspouts, peanuts/cashews and loads of fresh coriander and mint.

My boy's 14th today B-) ...have taken the ribs my daughter fussed about out of their tomatoey sauce and turned that into a pasta sauce to freeze  and put the ribs in the slow cooker with some soy, ginger, star anise and onion and will do some rice and salad to go with it...then more of his birthday cappuccino cake with cream for pudding (and if she STILL doesn't like em she can have beans on bloody toast  ).

You could have fresh finely diced cucumber, sweet pepper, olives, parsely, tomatoes in with the cous cous .
And maybe a drizzle of chilli sauce (or not hot alternative) for some extra flavour.
