What's for tea tonight? (#8)

Son's at his dad's, daughter's off to her school disco :cool: ...so just me...and I STILL can't be arsed with anything beyond the simplest cooking (been working in 30-35 degree heat for the last few days...and it looks like it's going to get hotter, too....uuuurrrgghhhaaaarrrrgggghhhhh), so boiled egg on toast with asparagus aaaaaaaaaaaaaaand PSB. I'm looking forwards to it, tbf!
 
Chinese shrimp and vegetable soup. A bit delicious this.

Finely chopped garlic, onion, leek, ginger and a chili softened in olive oil for about 30 minutes on a low heat. Add ground black pepper and coriander. Simmer in half a Litre of vegetable stock with chopped red peppers, sliced poatatoes and sliced spring onions for a further 30 minutes. Add more fresh coriander and mint with the shrimps about 10 minutes before serving.

Very nice with bread, or rice.

I am now contemplating a cherry and peach charlotte, but I am very tired. Cherries are simmer in a pan with cinnamon, lemon juice and brown sugar. Allow to cool before stoning. That is as far as I have got so far. May have to wait until tomorrow.
 
Ah fuck it. I'm going to do the charlotte with ice-cream.

Stone the cooked cherries. Pour into baking dish and top with peach slices.

70% bread crumbs with 30% flour and butter crumble mix on top. Whack into a modest oven for 30 minutes.

I can do this. I am not that tired.
 
Bit late in the night, but this is Spain in summer. The city is lively!

Cherries simmered with cinnamon and cloves. Allowed to cool before straining and stoning.

Poured into baking dish and topped with tinned peaches.

100 Grammes of butter rubbed into flour to make a rich crumble. Add 200 Grammes of dry bread crumbs, a pinch of salt and about a table spoon of raw brown sugar. Mix with a spoon and pour onto the fruit. Sprinkle a little sugar on the surface.

Whack into preheated oven at gas 7/240º for 30 minutes, or until surface is golden.

Serve with ice-cream

Yes, I was surprised myself though :D he actually said "oh, I eat tomatoes now" the other day, and I was all :eek: and :D

Well the chickpea curry was a success. I disagreed with all 3 recipes I'd printed out, so did a mish-mash and it turned out stonkingly well :cool:

Not sure yet about tonight. Got a bit of fresh coriander to use up...possibly veggie Moroccan meatballs...
 
God, the thought of food and cooking and stuff is just bloody irritating at the moment.

I might just eat crisps and ice lollies.

I did get some sort of deboned pesto chicken thing out of the freezer (reduced from waitrose). That is my contribution. If he wants hot food he can stand in the same room as the oven.
 
Holiday for 2 weeks starts at 4:30pm, so a celebratory slap up macaroni cheese before we head off to the annual Purple Radio festival :cool:

A spatchcocked chicken with some kind of spice/herb rub (can't remember exactly what the covering is apart from its red).

Edit to add - its a piri piri marinade, hence being red. :)
 
Took some veggie cauldron sausages out the freezer this morning so something with them.
Maybe just grilled and chucked in with some pasta and tommy sauce.
 
Now I feel like brandy and lemonade. I bought that cloudy stuff, cos it looks 'authentic' :D

Still don't know what to have for tea. Think it might be spaghetti and pesto/sundried toms/black olives, cos we've had tons of hot spicy stuff lately

Blimey, I was very pissed off earlier!

So, it's actually a deboned chicken with a Parmesan and tomato marinade. Mr s has gone to buy emergency beetroot and we're having new potatoes and salad with it.
