If you're talking long-grain as opposed to risotto rice, my mum used to make this, I still do and it's really good comfort food, hot or cold.Has anyone got a tried and tested mushroom rice recipe?
Fry some sliced onions, chopped bacon and mushrooms in a frying pan with some butter (it has to be butter because of the mushrooms, nothing else will do for this dish) and fry up well (I usually put in a few chilli flakes, which my mum never did). Meantime cook the rice. Cook some mangetout or petis pois, or ordinary frozen peas. Stir it all together and eat.
