What's for tea tonight? (#8)

I WANT to know when I'm coming round for dinner! Give me a date and I'll be round in a shot... I wish it's most days when I read what you're cooking. It always sounds well tasty. Hugs to you all xxxx

Thursday? Any requests?

homemade lamb burgers with scotch bonnets, garlic and ginger and salsa-style salad. there's shedloads, we bought a kilo of mince :D

ooh, I think I just cooked the best thing I ever whipped up from scratch :D
I was sauteeing some pierogies in olive oil, and I looked in the fridge for some type of veggie to add. saw some courgettes (well, I call them zucchinis) sliced and added them in after the pierogies had browned, then noticed a very ripe tomato, so chopped and added that, then saw a lemon, so squeezed some lemon juice on it, then thought it could use some spices so added some thyme, basil and garlic, then a little champagne vinegar, then quickly threw in some little breakfast sausages. Then remembered I had some light cream, so added a few spoonfuls of that.
My god, was it good, just bursting with flavor. I had been cooking asparagus so had it on top of that. yum-o.

Wow! Well done you.

I hope you remember to note down how much you used of what so that you can make it again.

Slow roast shoulder of pork.#
Just had it on 220 for 30 minutes to crisp up the crackling, now I have emptied a can of scrumpy cider in to the tin and put it on 170 for the next 5-6 hrs.

Griddled asparagus and butter
Roast leg of lamb, carrots, parsnips and roast spuds in goose fat
Salad
Gooseberry pie and double cream

I shall then explode

I'm having shop bought ratatouille (fresh in a tray), with jacket potato and a cheese & onion crisp bake & salad...I had it last week and can see it becoming a fave lazy dinner.

There's mince which was defrosted for yesterday but didn't get cooked, and we've had pasta in the last couple of days, so it'll probably be near enough shepherds pie.

Filled pasta (bacon and chicken possibly!) and three cheese sauce with garlic bread. None homemade and not at all diet friendly but it's the start of a busy week so we are having a treat/something easy!

Got my daughter for the first time in over a week :) ...and we're having pork chipolatas (Tesco's posh ones), oven chips and broccoli....and a cream doughnut for pudding.

Have subsisted on fuck-all save babybel and tinned tomato soup for a while now. Tonight I need something that is healthy, very comforting, cheap, easy, and relatively quick to cook.
Ideas?

Quick easy and relatively cheap options...

One tray roast - chicken thighs and/or sausages, sweet potato, swede, tats, carrots, onions - toss in oil and spices then in the oven for 40 mins - serve with green veggies on the side.

Great big veg stirfry with a few noodles.

Pasta pesto (comfort) with shrooms, green beans and broccoli (healthy).

Parcel baked chicken breast or fish with some veggies.

Bangers and mash (comfort) with a mountain of peas (veggies).

Show week for Mr. QofG's and I so a cup of tea and, maybe, a biscuit beforehand then cheese on toast or tinned Spag Bol (yum  !!) on toast afterwards.

Break a leg!

Something quick and simple for tea tonight as I've got to fit it in between finishing work and going to the boy's parents evening.
We have loads of eggs so probably an omlette - with mushrooms and cheese,

Ooh, this sounds like a winner...I'm thinking maybe chipolatas with roasted veg. And broccoli on the side.

if it's chipolatas put them in a bit later, or cut the veg a bit smaller :) salt, pepper, cumin, cayenne or salt, pepper, rosemary, thyme or salt, pepper, mustard powder, honey (honey might burn)... I need lunch!

Using stuff up - mushrooms, bacon, peppers, chillis, olives & capers in tomato sauce with pasta.
