the old switcheroo on the baked potato method, eh?

hhmmm cheese....:)

I'm having quorn cottage pie WITH roast potatoes , various veggies & gravy. I could marry a roast potato.

@ Badgers ...(It's not my PREFERENCE, tbf....I'm no fool  ...but from time to time I may have swapped over ONLY when I'm using scabby cheese slices, cos while I STILL prefer them to be on top, you do find that cutting through it just results in a big blob of the cheese stuck to the knife and the rest pushed over in the direction you've been cutting, with very little remaining on your actual mouthful of beans and toast   Having said that, although that problem IS reduced by doing cheese slice on the bottom, it's always a bit of a let down in reality, so I mostly still stick them on top...but from time to time, when I really can't be arsed with *extra careful knife work* I like to throw caution to the wind, despite the inevitable disappointment)

I have loads of potatoes to use up still so:
Cheesy mash with broccoli and corn on the cob with a chicken and mushroom pie.

Im so hungry i might start it now...... :hmm:

I couldn't be arsed cooking tonight so I had two cheese sarnies. Before Badgers asks it went bread, olive spread thingy, mayonnaise, cheese, lettuce, mayonnaise spread thing bread. I was hoping that I had some tomatoes in. :(

Sprinkle jerk seasoning on pork chops and leave to marinate for a couple of hours (I bought a shop one cos I'm a lazy cow). Then fry for about 10-15 minutes. Once the chops have been on for about 5 minutes put the corn in a griddle pan and keep turning till all cooked through.

The coleslaw was grated white cabbage, onion and carrot in a light coating of mayonnaise.
I got to the butcher just before he shut, so I'm having this tomorrow ^ :)

Tonight is roasted celeriac, sweet potato and a shallot tossed with feta and roast chicken - made up tea

Kind of got my mojo back a bit and planned the rest of the week's meals too :)

@ moonsi....ALSO! Mash ON the pie AND roasties?!?

I know...I always get jip when I post I'm having this but I do so love roast potatoes (and mash & chips). I'm faily brilliant at making them too...:D....soft & fluffy inside and nice and crispy on the out!

Various veggies are from the freezer compartment and will probably be carrots, sweetcorn & green beans. I did linger over some purple sprouting broccoli and some tender steam stuff but in the end the freezer veg won.
