What's for tea tonight? (#8)

Quite tired after my volunteer shift today. Am defrosting some thick pork sausages which I will have as a traybake with new potatoes, peppers, garlic, chilli flakes, and onions.

I'm making a big portion because why not. :)

Haven't decided what to drink, I still have about 1/3 of a bottle of very nice retsina left over from my birthday meal, I can hear it calling to me from the fridge...

So easy - it's from the little green roasting tin

Lay out a roll of supermarket puff pastry, spread 2 tsp mustard across pastry leaving an inch border around, cut up 250g in thin slices and lay out over the top. Mean while cut up 200g of carrots lengthways into slices, chuck in a bowl with olive oil and salt, mix well. Lay over the top of brie, chuck across some sprigs of sage, and season it all with pepper.

bake 200 for 30 minutes

The recipe says to use baby rainbow carrots, and I used rainbow carrots the first time, but since then just use regular. I find you should use more carrots than the recipe says to make it more filling.

Silly question - but how do you quickly defrost sausages, meat etc on the day?
I ask because I sometimes forget to defrost something overnight and end up having buying something for that evening.
We are all trying to save money in these times....

In a plastic bag in a bowl of cold water. (Make sure water cannot enter the plastic bag, obvs.)
Sausages are pretty quick however you defrost them, just make sure to separate them as soon as you are able if they are frozen together in a lump, so they each defrost evenly and quickly.

I did a duck that way once in a bin liner in a bucket :D

I feel like there's something missing from the bit in bold - 250g of what?
 
Homemade Nando's.
Peri peri chicken for me and the Tiddler, vegan no chicken buffalo wings for the littlun. Cajun potato wedges, Mexican rice, creme freche, probably coleslaw if I can be bothered/have time to make it.
A bottle of Desperado the littlun's mates left here the other night 😆
