What's for tea tonight? (#8)

I'm excited about tonight's dinner. I got a slab of beef flank from a Too Good To Go order, so I've taken some of the fat off and it's been marinading since last night in a mix of oil, soy sauce, red wine vinegar, mustard, lemon juice, garlic and pepper. I'm going to sear it for 5 mins either side, let it rest for 10 mins, and I'm hoping for tender, delicious steak. On the side will be air fryer fries and spinach. I might do a chimichuri sauce.
I absolutely ballsed this up. It was still way too rare after searing so I put it in the oven, which way over cooked it. Because I missed the timings I had to reheat the chips in the oven which dried them out, and I way oversalted the spinach.

The chimichuri sauce was nice :rolleyes:
 
Gonna be later back than usual tonight cos the fella's got a late teatime call. Oven chips and veggie cheeseburgers with salad then! All the mayo, garlic mayo, ketchup, and pickled jalapenos too.

The other half of the best blackberry and apple crumble I have ever made, with the rest of the vanilla custard. So fucking lush.
 
I was tempted to stick something quick in the oven after work.
But have a chicken casserole on at moment.
No big deal as all vegetables are all in one Sainsbury pack.
Have opened a bottle of wine and will raise a glass to Barry Cryer....
 
A veggie lasagne ready meal that claimed to be roast vegetable but was actually mostly mushroom and lentil :( It was pretty lacklustre.

In terms of ready meals, I used to like the Linda's veggie lasagne, but I've not seen those for ages.
 
Cannoli beans in a tomato sauce that was made a while back with lamb steaks with red wine vinegar and mustard. Thrown together one night when I was short of inspiration and now requested most weeks by the OH. I'll probably do myself a few slices of black pudding to go with it as the lamb steaks could be bigger....

I'm going to drink a very strong stout whilst cooking, been looking forward to it all week!
 
I'm also in "meal for one" territory tonight (I am most of the time tbh, I do wish OH wasn't on nights all the time, can't be helped for now mind you).

I have some streaky bacon that needs using and a tin of tomatoes so I am going to make myself a penne all'Amatriciana
