What's for tea tonight? (#8)

Never heard of an oven-baked risotto. How does that work? I thought it was all about the stirring.
You just do the onion frying thing, stir in the rice, fill it with boiling stock, stir, bung into a casserole dish and bake for about 25 mins on gas 5. It works. I had a cooky mate pooh-pooh it, til he tried it himself, and was forced to agree that it actually works.

Yep. Cant see why it wouldn't work. Its all about absorption

Haven't had a risotto in ages.

I bet plenty of restaurants do it in bulk that way. They can’t all be standing at the hob cooking individual portions for half an hour at a time.
 
Chicken and mushroom pie, roasted veg (parsnips, peppers and onion).

Last night was macaroni cheese and casseroled veg, including the last few inches of tromboncino. That veg is now soup for lunches, so when I've eaten all the soup, il tromboncino sera finito.

Perhaps I should put some of it in the freezer to lessen the sense of loss 🤔🥒
 
I'm trying to clear out the freezer a bit so am defrosting a chicken breast which I plan to have as a stir fry with mushrooms, carrots, celery, onions, and peppers (garlic, ginger and chilli also ofc) - going to give that Thai recipe that I loved last week another go with those ingredients, the sauce would go well with pretty much any type of stir fry meat/seafood/veg/tofu/nuts etc.

There is one portion of Jasmine rice left in the bag so I'll have that. Leftovers tomorrow night will be with noodles.
 
Husband played a blinder tonight - potato/courgette gratin with loads of garlic and parmesan, with some chilli-fried kale and broccoli on the side. Everything was perfectly cooked and delicious :)

Today has been shit otherwise, so I was ready to weep when this turned up on the plate :oops:
