What's for tea tonight? (#8)

Experimental microwave cookery following a Sainsbury's delivery: cous cous with chopped sundried tomatoes, fennel and microwaved veggie sausages, bit of garlic and parmesan. Really very nice. Maybe I should just not bother getting another cooker.
 
I made a veggie version of moussaka (tomatoes, peppers, a small handful of lentils for texture, to replace the meat portion - with the usual herbs/spices/seasonings of course). I do a version with potatoes as well as aubergine - takes a fucking age to prepare, but absolutely delicious and well worth the effort of doing it well.
 
Having folk here for dinner. Prepping now & refery not getting food processor out of the loft as using Ninja Bullett make beetroot falafels is taking ages! & I will prob burn out the bullet!

Having: beetroot falafels, Spanish garlic mushrooms.

Halloumi brushed with harissa, bulghar wheat, with red onion, tomatoes & pomegranate jewels dotted with yoghurt.

Vegan espresso martini chocolate mouse (using the chickpea water, first time making!)

Have a pinapple & basil iced tea in Kilner thing.

G&Ts & cider!
