What's for tea tonight? (#8)

Not altogether sure what we'll have. I've got lots of wraps left and only enough filling for one quesadilla but I took a small lot of pulled pork out of the freezer so that'd prob just do two wraps with some salady stuff which would do for me and the boy along with the quesadilla... but then I'm not sure when my daughter's back so I've ALSO taken out some hot dog rolls to go with a jar of frankfurters... all very CONFUSING! :hmm:
So much better ta, just in time for work :D
 
I'm fucking shattered, so could really do with just microwaving one of the many meals that I've made in the past and live in the freezer, but I did a fair bit of prep work last night so need to cook!

Had some chicken in a marinade overnight, some new spuds in ghee with turmeric and mustard seed and a coconut, chickpea and lentil curry. Rotis from the freezer. Tired but been looking forward to the meal all day as I was being blown around on the Staffordshire morelands. :)
 
Chicken, asparagus, broccoli, garlic, onions and mushrooms, stir fried with a dirty great splodge of pesto, spread on a wrap with more parmesan than you could shake a stick at.
God, it was lovely.
 
Ok I've made up a kachumber and popped in the fridge. I'm going to add black beans to it once the onion has gone really sharp from the vinegar and then I'll stir it all though some bulgar wheat. I'm looking forward to eating it.

This was nice. Had the last of the nice halloumi on top. I'll be making this salad again :cool:

Had some cranberry and raspberry yoghurt for afters... It wasn't a normal yoghurt consistency... More like a mousse type texture. Really yum and much needed as the salad was a lot spicier than I realised it was going to be :oops: :D :thumbs:

Your meal sounds fit. Hope you manage to have some resty times later :)
 
Assorted steamed dim sum, stir fried tatsoi with garlic, ginger and miso.
Totally overdid the dim sum and am stuffed.

In case this sounds like a takeaway it was not, although I admit to having got the dim sum out of the freezer rather than making them from scratch,if anyone actually does this.

Another grainy salad but slightly different to yesterday. With the grains we'll have: tomatoes, chilli, spring onion, lime and corriander. We'll have hummus and falafel too and I've got a load of lettuce to use up.

Edit: No coriander in the shop. Dressing was juice of a lime, chilli flakes, sea salt, two teaspoons of cumin powder and a little oil. Zingy AF.

The salad was massive so no hummus etc needed. I did add chopped up sundried toms though :cool:

Bunk barn special. Chorizo, pack of flavoured rice and some veggies. Its tasty, but I need to get more creative for wholesome fishes that can be cooked relatively quickly, on one ring and uses ingredients that require no refrigeration.
Tinned fish would be useful to add healthy stuff.

I had a reduced to clear Japanese spicy prawn rice thing from Sainsbury's, with four clementines for afters.

Yeah. I've had Mackrell to make a pasta sauce with the last few trips, but never quite found the appetite for it. I should as it ticks all the boxed and is healthy!

Other tinned fish are available ;)

You could also use tinned pulses like chickpeas. They are surprisingly nice in a carton of chopped tomatoes, with chilli flakes and olive oil.
 
Leftover fried chicken, noodles, cabbage, avocado and sesame prawn toast (got the latter in the TB). Plain yoghurt for dessert, had loads of fruit at lunch. Followed by the obligatory chocolate and tea. I never miss a day without eating around 4 squares of chocolate, usually dark chocolate and after dessert :oops::).
