We're on mushroom and cheese omelette, or frittata, depending on how I feel, with homemade spicy wedges, and salad. Nice bottle of Pinot Grigio first though, thanks to the fella being paid a bit of band dosh :thumbs:
 
Spent the day walking in the hills and came down famished. Split a portion of chips and sausage with the other half. It's rather stalled our main meal. Still I boiled some new spuds earlier, so going to fry them with chorizo and onion and chickpeas with loads of spices. :cool:

Fortunately a couple of pints is bringing my appetite back. :)
 
Last night was seafood chowder with brown bread and a shared open sandwich with smoked salmon, salad, pickles and prawns, chips on the side and a pint of red Murphys. Rhubarb crumble and vanilla icecream for dessert. Really nice and sunny too, on the Wild Atlantic Way :cool:

We're on 3 bean chilli tonight, with brown rice and sour cream and a shedload of extra mature cheddar. NoMMMMM.

Fry up an onion or two a few cloves of garlic and a chilli.

Add a diced courgette or two and fry for a few mins.

Add a teaspoon of ras al hanout ( but any spicing you fancy I reckon will work - cumin, coriander, cinnamon, mace...) then a couple of tins of tomatoes, a tin of chickpeas and a bit of stock - I also added some rosewater here, but I don't think I could really taste it in the dinner so you can skip that if you want.

let it cook down til it looks good and fold in a bag (or say 200g of frozen) spinach. You can add some harrisa if it ain't spicey enough for you.

Then make a few wells and pop your eggs in to poach/ bake. Some chopped corriander to serve.

The rice was just boiled brown rice, all the bits form a pom, a tablespoon or two of toasted cumin seeds and a few cloves of pickled garlic chopped into chunks
