What's for tea tonight? (#8)

I've shuffled my plans around and am going to paint tomorrow and spend today doing some cooking so that there'll be stuff that's quick to reheat :thumbs:
I have to make pizza dough and sauce for next week and I'm also going to prepare the stuffing for pork momos and do a sausage/bean/pepper/corn/courgette/sweet potato stew thing...plus, I'm making rice pudding :cool:
We do still have hot dogs left, too, so dinner today will be whatever we fancy from that lot.
 
Cooked yesterday. Will do for a dinner or two plus lunches :thumbs:

1lb steak mince rolled out with a bit of fresh thyme and black pepper. Conventional wisdom says use a rolling pin, I haven't got one so a wine bottle did the job. Covered with parma ham and mozzarella slices. Finely chopped chestnut mushrooms and onion with thyme and a light drizzle of truffle oil for the stuffing.

Rolled up into a parcel and wrapped in pancetta.

Oven for about an hour or so. Serve thinly sliced on a ciabatta roll. Viola, Italian meatloaf.
 
Having the cottage pie for lunch.

Girl has requested hot dogs (sausages) in rolls with ketchup and pasta :D

She won't eat the roll, so might just do sausages with pasta pesto and green beans.

I have parked the spag till tomorrow and am finishing the beetroot soup instead as it is more urgent.

Doing better on the home cooked dinners this week anyway after a poor start.
 
Belatedly jumping on the kachumber bandwagon (Thimble Queen) :thumbs:

Going to make a big pot of aubergine, spinach & egg curry to last through 'til giro day, plus separate baked spicy cauliflower and possibly chana dal (or I might just chuck a tin of chickpeas into the curry) :cool:

I get far too excited about food :oops:

I really can't be arsed cleaning the skanky fucking kitchen I have to share, so saving this for tomorrow.

Piri piri chicken thighs fried with red onion & green pepper, half a microwave pouch of wholegrain rice & quinoa with tomato & basil and a little gem lettuce instead.
