iona - I mince 3 garlic cloves and fry gently in a little bit of oil, then add a tub of mascarpone and stir until smooth, add a handful (or two if you fancy) of grated parmesan, and when that's melted in, chop some fresh spinach and chuck that in for a few mins.
This is optional but fucking well lush - add the juice of half a fresh lemon towards the end. Thins out the sauce and adds an amazing note of freshness that brings out the spinach and works against the clagginess of the sauce

I did yes. Added a tart freshness to the sauce, which stayed perfectly intact.
