Something with chicken...
Ended up doing a cauliflower, chickpea, lentil, tomato and spinach curry. With my last packet of whole grain rice and quinoa. Lush and enough - loads - to freeze.Last night was chicken fajitas with refried beans, guacamole, chipotle creme fraiche, a salsa of tomato, chili, coriander and onion, and grated cheddar.
Tonight ... I've got loads of veg, maybe a curry. Or stir fry if my fu cba.
