What's for tea tonight? (#8)

Kids ate with the childminder in the end, so me and the husband are having chipotle turkey burgers with mixed potato wedges.

I should do a vegetable element but really can't be arsed.

Off to a bbq later where there will be pizza too. I'm taking a Mexican salad, pineapple & halloumi kebabs, veggie burgers & a Moroccan veggie sausage. BF also has seabass to be done with basil and lemon.

Also have fake Pimms and the host has barrels of Three Tuns ale which is 4 pints for a fiver. Im taking jalopenos, black olives and pineapple for the pizza.

Poached salmon pasta. I'll shred the salmon and grease it up with some vine-ripened tomato paste. Half a pound of cherry vine tomatoes for afters.

Last night-creamy mushrooms on rye toast, ribeye with fries, béarnaise sauce and green beans then a trio of mini puddings- lemon tart, tarte tartin and chocolate fondant. Lots of red wine and Hendricks gin.

Tonight-I'm still a bit hungover so stodge. Katsu chicken and coconut rice. Possibly some edamame beans too. [emoji4]

We've got a veggie friend coming over tonight and I'm going to do a courgette, mint & feta tart (which has a layer of minty, garlicky, pea puree on the bottom). Saffron braised potatoes and tomatoes to go with it ringo, I'm really looking forward to tasting them
Raspberries and cream for pudding.

This was a triumph of a meal. Every part of it was just lovely.
Everyone went back for seconds.

I can see that the potato dish is going to become a regular in our household
We've been eating the potatoes from the garden for the last week or so, but they didn't steam or roast very well and were a bit disappointing.
They were absolutely delicious cooked like this though.
*goes out to buy saffron*

Since I didn't manage to lose any weight last week, I feel I need cheering up.
My neighbours are about to put something fancy on the barbie, so I'm going for broke with a repeat of last night's low calorie soup, green beans and a whole can of sardines. :p
Drained, the sardines would be 180 cals, but the flavour is in the oil.
The soup is only 156 ...

Pistachio magnum.
Cheddar and "smoky braised ribs with ancho chilli" crisps sandwich with BBQ sauce on granary bread.

Need something else but I'm not sure what.

We had a gorgeous curry. I had chicken Ceylon, coconut rice and peshwari nan. I'm clearly obsessed with coconut. [emoji1]
We don't usually use this place as its collection only but it's loads nicer and cheaper than our regular place so we'll have to stop being so lazy.

Mr K made a surprise tea last night. It was basmati rice with chopped tomato and gherkin, smoked salmon, some garlicky toast and some buttered mini corn and asparagus. It was really, really nice.

Tonight we're having something with chicken.

I was going to do a full on roast pork dinner yesterday, but the garden won and we had roast pork sandwiches instead.

I made some of this courgette salad too:

It was light and fresh, soaking the raw onion in lemon juice really mellows the flavour.

Tea tonight will be the rest of the pork in wraps with salad.
I might stir-fry the pork with garlic, ginger & soy.

I was considering seeing if I could go without tea to make up for last week's poor diet results, but I have salad to eat up so I baked 350g of spuds.
I added a bit of dressing to the salad to spruce it up ...

So perhaps 350kcals total.

I may just scrape under 2,000 calories if I'm careful with "pudding" .....
