What's for tea tonight? (#8)

We ended up having feta and red pepper quiche, chips and salad last night.

Tonight will be veggie cheeseburgers, crunchy salad, and a big ole potato salad with chives and paprika - mmmMMMM
 
I'm stressing about it already. :D I've got my brother and sister-in-law staying tonight. They're quite carnivorous so I'll certainly be cooking something with meat. They're also quite conservative in their tastes and don't like anything very spicy, which rules out some of my usual standards. Meanwhile, my brother was talking seriously a few years ago about quitting accountancy and opening a gastropub: I'm not a bad cook, but I'm nowhere near his standard and feel I've a bit to live up to! Oh, and I don't know for certain what time they're arriving so whatever I end up doing needs to be something that'll tolerate keeping warm in the oven for a while.

So far I'm settled on jacket spuds and a casserole of some kind - possibly sausage casserole to a recipe I made up and which has always gone down well - but I'd like to do a third dish and I haven't the faintest idea what to do!
 
sausage and bean casserole. going round a mate's house to watch DVDs (Battlefield Earth and Guardians Of The Galaxy) and knew I wouldn't be offered owt and would starve, so volunteered to bring food and cook myself. he's a rubbish cook anyway, so it's just as well.
 
just had chicken breast that had been marinaded overnight in coconut milk, then the milk was used to make a suace with tumeric and various herbs. Served with potato roasted, sliced in half then lightly touched with chilli powder.



I was skeptical as to ma's claim that overnight in coconut milk would do much to the texture as well as the flavour of the meat. Doubting Thomas proved wrong again, it made it really springy and tasty rather than just dry old chicken breast.

I hope you thoroughly cooked the coconut milk when making the sauce, as it could have been contaminated with food poisoning beasties. :(

as I said the other day, he'll just be delighted someone else is cooking for him! I know I am and I'm not that good!
 
tonight for tea i went to asda and got a pizza and decided to browse the crisp isle for my afters and saw a 7 pack of bbq hula hoops for about a pound. imagine my disappointment when it got to tea time and i finished my pizza and moved onto dessert to discover i'd actually bought bbq mini cheddars in error.

as I said the other day, he'll just be delighted someone else is cooking for him! I know I am and I'm not that good!

I'd forgotten we had this conversation! I ended up playing safe with a beef casserole. given that every last scrap got eaten I think I can count it a success! :cool: :D

Yesterday had a ginormous pulled pork and cheddar sandwich with chunky chips in the seaside town of Dalkey. Very like Brighton and the sun was splitting the stones! :cool: Really nice boozy afternoon and book festival with friends.

Today it might be a barbeque if the sister calls back, in which case we'll keep it simple with jumbo sausages and burgers (well, I always say im gonna keep it simple and end up spending around €50 in the shops...:rolleyes::D..) My sister is a vegetarian so she will bring some interesting food as will her French foodie husband - he usually brings Merguez and Persian sausages.

if not, i have some minute steaks defrosting so it'll be that, mash with scallions, and fried mushrooms and onions, followed by sticky toffee pudding. Im starving just thinking about it.
