What's for tea tonight? (#8)

I rinsed off the liver and fed it to the cats :D

nice one kid! you know i bought my sisters cats beef liver the other day, it looked delicious....they turned up their noses at it...same with raw meat....they will ONLY eat catfood (cheeky buggers!) But of course, we want to please them.....

My dad has to go on a low cholesterol diet...:(' - this means healthy food! :('....but maybe a better bikini fit for South of France in July . Still.....okay, we'll move onto my Brixton diet of steamed fish and vegetables.....

Chicken veg soup, with a multi seed demi-baguette* that I picked up from the Waitrose TB tonight for 9p.

* basically a baby baguette, not sure why it's got a daft name.

I suppose demi-baguette is easier to say than baby baguette.
I have just greatly amused myself by saying baby baguette over and over. Ta for that. :D

As for my tea, I cooked up a great big pan of beef mince with loads of chillis and spices and the tail ends of the bags of frozen peas and sweetcorn that have been getting on my wick every time I open the freezer. It's pretty tasty, too. I had it with salsa and sour cream. So it'll be more of that tomorrow.

I sautéed a diced potato, some smoked lardons, a chopped onion, a few cherry tomatoes, chilli flakes and some chickpeas and then added a tin of chopped tomatoes and simmered till gloopy. Had that with some couscous - worked quite well and I have some left for breakfast.

We have fishcakes for our tea tonight. Not sure what to have with them. Was thinking of chopping up some mushrooms, peppers and other bits and making a little chilli, oil, vinegar concoction to put on top. Prob still need something else as well tho... Maybe I could put some beans in the salad??

Last night I actually cooked a full meal. I cut a cauliflower into slices and fried it with a cornmeal crust. I made a rice pilaf with pistachios and dried cranberries. Then I made sirracha coleslaw and a miso beet pickle. Tonight it's leftovers.

I found a sachet of bisto "country chicken casserole" concentrated casserole paste that I was given as a freebie some months ago, so I'm doing a chicken casserole pimped up with lots of fresh chillis and chilli flakes to become a spicy country chicken casserole. The recipe calls for onions and carrots as well as the chicken, and to go with it I've got some green veg - beans, asparagus and tenderstem broccoli. And rice, I think. Or noodles. I haven't decided yet.
