What's for tea tonight? (#8)

Yesterday we had roast chicken, roast potatoes, yorkshire, carrots, psb, cabbage & gravy.
We had 99s for pudding, except we had them as a start because the icey came round just as I was putting the chicken in the oven :oops:

Fast day today so I've got a cod mornay ready meal.
 
yesterday was jerk chicken and rice and beans from one barbecue in the early afternoon, then a round of barbecued chipolatas later in the evening from another barbecue :cool:
I want to cook something extravagant and delicious yet speedy tonight :hmm:
 
Veggi spring rolls. (if they haven't gone off through being out of the fridge for 48 hours ...)
Wholegrain rice
Sweet chilli sauce.
 
I'm still enjoying my wrap fiesta. This one was a bit different because I assembled it and stuck it on the George Foreman to grill/toast it to make it into a.... dunno, but I bet it's got a name. A parcel of yum, anyway.
I assembled it like this:
Wrap, grated cheese, refried beans, then chicken strips that I had fried up with onion and peppers and garlic. Folded it up like a poorly made bed and when it was all brown and crispy, I dished up with salsa and sour cream.
For pud there is still some of yesterday's Tarte au citron from the Sainsbury's reduced section.

I consider myself well impressed.

Was gonna have chicken curry, bought ingredients but got home and theres half a tin of beans to use up so its beans on toast, had 2 satsumas, a pear and 2 apricots, putting beans on in a bit.
 
Was going to have some peppered mackerel, but just can't be bothered so it is a can of G & T that's been lurking in the fridge and then bed to catch up some missed sleep.
 
I made something inspired by a caller on LBC this morning. I've gone right off cooking lately. This was so simple, why'd I not do it before.

Basically a load of vege baked in olive oil. I know, I know, :rolleyes: at self. Simples. Damn nice. Carrots, leak, pepper, carrots, chunks of tomato and garlic. Topped with grated chese.
 
We had cauliflower and broccoli cheese and corn on the cob last night. I've gone right off meat so am struggling a bit for what to cook, my veggie repertoire is tiny.
