National Sausage Week 28th October – 3rd November

Veggie sausage pasta.

4 veggie sausages of your choice (eg quorn ‘best of British’) (chopped)
2 red onions (sliced)
2 cloves garlic
8oz pasta
1 jar rustic passata
1/2 jar Salca Intenso
1 - 2 tsps smoked paprika
1/2 tsp Chili flakes
1 tsp dried oregano
olive oil
Cheese (grated)

Boil pasta in veg stock enriched boiling water

fry chopped sausages and onions in olive oil until coloured. Add garlic, smoked paprika and Chili.

once garlic is cooked add all the other stuff except the pasta and cheese.

when pasta is ready, add it to the pan. Serve with grated cheese on top.

Forgot the frozen broad beans. I usually add broad beans. But you could use peas if you’re not keen.
 
When I do sausages I always do meat for me and veggie for Nate - for veggie toad I prefer quorn ones or other smooth veggie sossies, the Lindas have a slightly knobbly texture that doesn't work so well to form that all important batter-to-sausage interface... otherwise, cook it exactly the same as you would if it had meat sausages and it works a treat.

Oddly, I made veggie sausage pasta for dinner last night.
 
Good to see some decent veggie sausage options. Am planning to include veggie options for my week long celebration.
We tend to get the Cauldron ones, but if anyone has recommendations for really good veggie sausages, I'd be delighted to hear them.

(I'm a meat eater, but mrs mx is veggie, and I'm doing that "cutting down on meat" thing.)

Good insight.

I was veggie a long time ago and the sausages were not great :D no doubt things have moved on/improved since? Recommendations welcome here on the #sausagefest

Cauldron were my go to sausages. Less salty and dry than Linda imo. Not tried many more
 
I am not generally a fan of veggie sausages (I was veggie for a long time and have always hated and avoided quorn and soya products) but the Linda ones I like - both the normal ones and the red onion and rosemary ones - I think the latter taste a bit like stuffing, which I love :D

Yeah, I need to go and buy some individual toad sized tins, but this sounds like a good reason. It might be a week of sausages, I like sausage casserole (nothing fancy, just sossies, onion, carrots, celery, bit of flour and some red wine and stock, served with buttery mash) too. And sausage, beans, chips/sausage, peas, mash, onion gravy/sausage, tinned tomatoes, cheesy mash too... All very comforting favourites here :D

I have a similar recipe but finish it off with a topping of breadcrumbs and herbs and stick it in the oven for 30 mins until crispy :thumbs:
 
I find veggie frankfurters are generally nicer than veggie sausages. I think this is because real frankfurters contain such a small percentage of pork and a lot of flavourings that it's quite easy to mimic.

(I googled what's in a Frankfurter to be sure. I suggest you don't. :facepalm:)
 
Hairy Bikers’ sausage casserole for tea tonight and probably tomorrow too :cool:

It was definitely planned for national Sausage Week and not just what I pulled out of the freezer last night :hmm: :D
