What's for tea tonight? (#8)

And for pudding - trifle, made by my mum, which is the undisputed world heavyweight champion of trifles :)

That is a bold claim to make as my mamas trifle reigns supreme. Well, I say "trifle" due to her hand disability and the difficulty she has holding and pouring the booze it is more like a thick sherry cocktail with cake, cream, jelly and fruit :D

I had falafel in Moroccan style flat breads, with red pepper, beetroot salad and houmous.
Mini magnum for pudding.

Fast day for me too day kittyP
I had a prawn tom yum thingy from Sainsburys.
Not too bad at all, at least it had plenty of oomph.

I'm now having a cup of decaf black coffee - woo, go me

Ooooh I love tom yum.

I am actually not hungry.
Think I'm going to have a nice plungy coffee instead and have the salmon tomorrow as I'm fasting then too.

Strips of chicken breast, coated in southern fried flavouring, pan fried and served in a tortilla wrap with salad, sweet chilli sauce & mint yoghurt.

Much as enjoyed my summer rolls, they don't make for a proper tea so I hungry again. I'm now having to fill up on toast.

A bold claim indeed, but one I stand by :) we could have a 'no-holds-barred all star mum's trifle smackdown' though. Mums' trifles are proper badass ;)

Grown men have been almost killed in the now traditional Boxing Day trifle stampede.
I would invite you to try some of my nanas but as she has 6 kids, 6 children in law, 12 grandchildren, 6 grandchildren in law, 5 great grandchildren and one very greedy husband I don't think there'd be any left for you, sorry :D

What goes in these wonder-trifle's? I do a good one, but I'm always looking to raise the bar a notch or two

I don't really like trifle :(
Not ones with fruit in anyway.
I love fruit but only in certain things and trifle isn't one of them.

and had chicken in a white wine, tarragon and cream sauce, with spuds and veg. Was a bit rushed, as I'm also cooking for my mum these days and have to run a plated up dinner down the street every night before I get to taste mine. Could have used a less dry wine or added a bit of sugar if I had the time to stop, taste and think

We had pulled pork wraps in the end, with peppers and red onion fried in chipotle sauce, plus lime yoghurt. And wedges <greedy>

Tonight, it will be whatever is the least amount of effort, plus booze.

Caremelised red onion and pork sausages, fennel braised puy lentils and salsa verde. White wine.

In a bid to get my health & enthusiasm levels up again, we will be having some kind of tofu & veg stir fry I think, with rice. Need the protein & health points atm.

There are some spicy pork steaks in the fridge that need using up so it looks like we're having those for tea tonight.
Don't really fancy potatoes tonight so I might do some couscous for a change.

I think I've also got some halloumi that needs using so I'll grill that along with the pork and add it to the couscous along with cherry toms (we're getting loads of these from the garden atm and they are delicious ), cucumber, spring onion and some lightly cooked french beans.

Slow cooked lamb shoulder with honey & balsamic drizzle - from M & S reduced to clear so not my title before you think I'm a poncy git. :p Will have some salad stuff with it - spring onions, cherry toms and orange pepper with it I think.

Just had a dry fried salmon fillet with lettuce. Salt, pepper and lemon juice on all.
Was pretty delicious and about 300 calories so I can have a pear later if I want :)

I've got chicken thighs in the freezer, so maybe some kind of chicken/chickpea spicy stew. Or possibly something more exciting...

Ooh, that's nice. Good shout!

I got a pack of saffron for my birthday, as yet mostly unused!

I've also got red peppers and chickpeas...chicken thigh/peppers/chickpea/saffron casserole it is, with baked sweet potato on the side.
