What's for tea tonight? (#8)

we have some chilli in the freezer so possibly that with sweet potato topping... the sweet potato is mashed with garlic, ginger, lime, corriander and chilli... spicy cottage pie mmmm

Had something entirely different... made up a cheats carbonara with pancetta, mushroom, loadsa garlic, whitewine and creme fresh... served it with gnocci. It was just the thing for a monday...
 
Monday roast which was cooked while I had an accidental nap. : D

Lamb shanks, roasted carrots, new potatoes, stuffing, broccoli and green beans. : )
 
My son has another osteopath app. so we're just going to have beans or scrambled eggs on toast when we get back in...and porridge with maple syrup and squirty cream for pudding :cool:

ETA....BOOOOOOO to bladder pain, soj! :mad: :( Hope you feel all better asap!

We had a small bowl of buckwheat noodles and home-made pasta and aubergine sauce. I love those noodles so much, three minutes to cook and possibly maybe healthier than normal spaghetti. :cool:
 
I did thighs last night. Put a couple of slashes in each and put them in a covered bowl with olive oil, salt, pepper, garlic, basil and lemon zest for about an hour. Roast for 25 mins. Turned out lovely with a green salad and mushrooms.

I must try this in my new pie dish...I've never thought of spicy sweet potato topping before! I bought bags and bags of frozen Quorn mince to make shepherd's pie with this weekend and it's getting seriously tedious eating.

Last night's dinner was actually excellent and simple...mushrooms and courgettes cooked in tomato sauce with a tiny bit of chorizo, served with pasta, mixed up with grated cheese.
 
Chopped fried Schinkenspeck, chicken, leek and onions with summat. Maybe potatoes, kale or courgettes, haven't decided yet

the lime and other bits make its quite zingy... def recommend. You could use the quorn mince do veggy chilli nachos?
