What's for tea tonight? (#8)

The chicken in the fridge was fine, I had defrosted more than I thought, so thank goodness it didn't go to waste! (I skipped the first meal I intended it for due to slight illness so it was in the fridge longer than intended, thankfully it had a long date on it when I froze it and it was absolutely fine).

That being the case, I cooked the whole lot in last night's Thai style stir fry dish and have another large portion to reheat tonight, which I will have with egg fried jasmine rice.

OH meanwhile has been making his way through the massive pot of Red Curry (fish/prawns/potato/green beans/pak choi) that I made for him, with plain jasmine rice yesterday and egg fried rice this morning.

Still have various fresh ingredients that need to be used over the next couple of days, am considering the below recipe for tomorrow (morning for OH, I might eat at the same time or reheat a portion of the prawn dish later and make fresh rice/egg)

 
Did the recipe that I linked earlier, will link it again because it turned out FUCKING AMAZING!!! Definitely on my list to do again.

I kind of assumed when the recipe calls for rather a lot of basil that as it is a popular Thai dish that it probably meant Thai basil so I used that as I had a load that needed to be used, ordinary basil would also work well though (slightly different flavour as Thai basil has a much more liquorice taste, but bog standard basil would also complement the dish and work just fine in it). I served mine with only 1 birds eye chilli added and added an extra 2 to the rest for OH as he likes stuff really hot.

Going on my list of favourite recipes, so am sharing the link again here, if you like Thai flavours then this is a winner.


EDIT to add: I did my fried eggs with soft yolks rather than whatever that is in the photo that accompanies the recipe :D

I found half a bag of spuds that I had forgotten about and needed using urgently so I boiled and mashed them, added grated cheese and fried onion, and made potato cakes. Food waste emergency averted!!!

OH had 2 with 2 fried eggs and 2 thirds of a tin of baked beans just now, he's off to work shortly.

I will have 1 potato cake later (and put the rest in the freezer for another day) with some unsmoked back bacon, egg (undecided whether to have fried or scrambled yet), mushrooms, and the rest of the tin of baked beans. Oh probably some brown sauce, I feel like brown sauce goes well with potato cakes and bacon.
