What's for tea tonight? (#8)

Thats handy, as we're having tagliatelle with what I suspect will be a rather underwhelming aubergine, courgette and sun dried tomato sauce.
Actually the sauce was much better than I expected - it was this one, although I didn't bother with the nutritional yeast as I don't have any.

 
No need to apologise, you're bang on there. It tasted nice enough but I only had a bit just because of what it looked like. Top tip: don't put purple carrots in mash!
I gave someone some rainbow carrots and beetroot the other week and the purples and oranges ended up bright red after it'd all been roasted and boiled and blended into soup. Tasted nice but the fact it was bright red but didn't taste of tomato was a bit of a headfuck.
 
I'm turning the remains of last night's chicken stir fry into fajitas :D

(Have 2 flour tortillas and will add spices to the chicken and veggies - paprika, chilli powder, garlic powder, oregano, cumin, salt, pepper, also have sour cream and guacamole and cheese which will get involved)

I’m glad your fajitas meet with approval and aren’t challenged :D

I never have the accompaniments much as I like them - too many calories

I love the accompaniments - the issue here is that the flour tortillas were on offer if I bought 2 packs, which of course I did - 16 tortillas means we've had a lot of fajitas lately. I'm having the last 2 of those tonight and am going to defrost some prawns and prep some veg and get it all coated in my spice mix for OH to have with the leftover taco shells when he gets home from work in the morning :) He's always knackered when he gets in so having something prepped that he can fry up quickly and have with a can of beer before collapsing into bed it helps - and we have leftover refried beans, guacamole, 2 types of salsa and sour cream - so it's the makings of a good meal for both of us, quickly cooked, at different times with really only 1 lot of of prep.

I do love fajitas but I am feeling a bit fajita'd out atm, probably won't have them for a while after this, it's been fajita fortnight here for sure.
