What's for tea tonight? (#8)

i think i shovelled it down too quickly and i was in a nervy mood, true. But i suspect it WAS the meat - even though i fried it for like 15 minutes before adding the cream, i suspect it wasnt fully cooked  The second time, it was cooked the bijeipers out of, and thats why i didnt get sick.

You wouldn't get the shits, instantly, from something you ate because your body wouldn't have even started trying to digest it etc yet.
If indeed it was something you ate (and not a stomach bug or something) it would have been something you ate much earlier than that.

i wasnt drinking. that was a cheap shot OU. Slaggin off people who - i am very proud to say USED to have a drink problem - is a bit mean.

but you are the High King of Scotland so I forgive you.

sorry, didn't know you'd given it up - wel done- i'm just speaking from experience - if i've had a heavy night, it's the booze that churns your guts up. the food might trigger the upset, but it's already upset IYSWIM.

i honestly cooked the pancetta for about 15 minutes, i am a paranoid type that is paranoid about meat being undercooked. Absolute hand on my heart on that one. Could it have been the mushrooms? I do think i had a 'bad stomach' kind of hair day though. Ms Spangles could be right, sort of

you would have overcooked it then - it only need 2 or 3 minutes to fry

i got em about 15 mins after finishing meal. Fast metabolisms mean you go the loo (for a number two) about five mins after eating a curry. I swear this is true (excuse the gruesomeness and hijacking of thread)....anyway enuff pancettagate investigations - thanks for the ideas people!!

carbonara is not a 'sauce'
carbonara is eggs (whisked) + cheese (romana, parmesan) + seasoning
the pasta is then cooked and drained, then the egg/cheese mix is stirred into the pasta

the heat of the pasta 'cooks' the egg/cheese mix. it's not meant to curdle - the consistency of the 'carbonara' should remain sticky/coating.

Heh, I managed to resist pointing out that Cheesy wasn't cooking anything approaching a carbonara too. Sometimes even the simplest recipes get corrupted

:D

of course!

starter: http://www.bbcgoodfood.com/recipes/4886/broccoli-and-blue-cheese-soup
main: http://aww.ninemsn.com.au/food/fres...d-potatoes-in-garlic-cream-sauce-pamela-clark

I always use more blue cheese than recipes say, because I like alot of cheesiness :)
I didn't use prosciuttio in the main and used more garlic than one clove (because I'm used to cooking indian food with lots of garlic in it)
just had this - NOM - though bit heavy for such a warm night and maybe not the most ideal meal to welcome my parents back from a week of eating fat and drinking wine in france.

My Dad and I have both been suffering from all the signs of food poisoning since Friday morning, which we put down to a dodgy takeaway curry we shared on Thursday night. However, my lil sis has just started suffering from exactly the same symptoms this evening. So what we initially assumed was something not cooked properly is actually some sort of bug that is going around. Maybe that's what has happened to you too Cheesy ?

carbonara is pretty simple really.....unless you are kin to some wizardry the world hasnt yet embraced?:(

what's your recipe then cheesy? i didn't know it had mushrooms in it, i thought it was just parmesan, egg, bacon and shit loads of pepper?

yeh thats pretty much it. but tarranau may hold some vital key to the errors i must have made:confused: i really think you should ask him!

i think he was also taken aback by the presence of mushroom. and garlic. and onion. it's you who sems to have complicated it by adding extra stuff.

My old Italian flatmate used to recoil in horror whenever I put cream or mushrooms in a carbonara, calling it an English bastardization. He still ate every bit of it and licked the plate clean though. :D

cream and mushrooms make a delightful addition to pasta, but it ain't carbonara is it? it's the raw egg stirred in that makes it for me. cream and mushrooms would corrupt that eggy yumminess.

nah should still work. we live in a world where boundaries can and will be broken. Carbonara can be tweeked to ones heart's content. Success is near certain.

That is my upset about the meals sheer futility. its epic failure shall forever reign. its upset was (and the memory thereof, sadly remains). However, i stand by your original inkling that the pancetta lardons may have been a bad batch. Its the best argument on this thread so far.

though one could argue that the bolognaise is more forgiving than a carbonara. mushrooms and cream would so change the character of a carbonara that you couldn't really call it that anymore.

cos the egginess would be overwhelmed

nah you can do it with cream....you can also do a lasagne bechemal sauce with creme fraiche and parmesan.....thou shalt not have to do carbonara with egg yolk (although to be fair, my normal carbonara is done with bacon and egg yolk, so the lardon fail was a deviation in the extreme...) Now, would you recommend excommunication or a short sentence for that? or a quick dazzle as court jester in the courtyard? as the High King i do worry sometimes that you would be led too much by advisors and influence....<little cry>

:(

Scutta made a stir fry of shitake mushrooms, pak choi and spinach. There was lots of other bits in there, too many to list!

Tomorrow he's making a massive veggy chilli with black beans, adzuki beans and home made guacamole. I'm feeling very spoilt :)

an eggless carbonara is certainly not a carbonara!

Over the last few hours i've had a couple of helpings of sunday lunch. I have managed to demolish mash, peas and and *entire* quorn family roast  *weeps into onion and garlic gravy and attempts to roll towards the sofa*

Made a stonking butter pie yesterday, best one I've made so far. Did a thicker pastry base this time and blind baked it. Unfortunately the packet of mushy peas was well past its sell by and they didn't go mushy, and my bamboo steamer must have been blocked or sommat cos me carrots and cabbage wouldn't cook after 20 fucking minutes of steaming  So we ended up having mahoosive slices of pie, with baked beans, mashed sweet potato and roast veg gravy. Still delish

Tonight, pesto pasta, black olives, parmesan
