What's for tea tonight? (#8)

Might break out the Ottolenghi paella again, if I can get artichokes.

I changed my mind. We had farfalle tossed in pesto, peas, toasted flaked almonds, artichokes, olives and parmesan. And some strawberries.

I had pasta shells (conchiglie?) with petits pois and lardons with a bit of sour cream thrown in. Was delicious and fast too!

Jayne- i had a very similar thing Yesterday: my friend made us pasta shells with panchetta lardons, mixed peppers and creme fraiche.
A nobly bobbly lolly for pudding.

Eta: tonight is a red pepper and goats cheese quiche with green beans and broc.
Kiwi fruits and melon for pudding.

recently, I bought pancetta lardons from Waitrose and I thought a carbonara could not conceivably go wrong with them......fatal mistake and will NEVER use them again:(

What happened?

I make carbonara with the leftovers from a cooked ham. But I would have assumed lardons did the same job no?

NO!!

I sushied into Waitrose, ambling down the aisle, whistling cheerfully. The grand plan was a simple carbonara that is one of life's easiest and foolproof recipes - so I thought!. Usually I make carbonara with bacon but this time I thought I'd use pancetta, and buy it ready chopped to save myself time. So i trot happily home, and got started. The date on the meat was fine, it looked fresh and was quite diced in little cubes. Fried some onion and garlic in a little oil and butter, add the pancetta and it was frying away, smelt lovely. I wanted to make extra sure that it was cooked fully as cubes were teeny chunks, and it seemed to brown a little. Added the mushrooms, all good and cream. Cooked tagliatelle (fresh stuff from waitrose, and bad quality), added my sauce and got eating. It tasted pretty okay, but i recall feeling really disappointed as Carbonara tends to be a delicious no brainer - this was not. I wolf down the meal (I do eat kind of fast and was in hurry so a bit nervy), and after dinner.....first I get the runs. Then......I went to the loos and puked. It seemed to be the meat. I just know it was the pancetta, as everything else was fine, even the substandard spaghetti (if you buy the fresh egg tagliatelle from Waitrose you'll know what i mean - odd), yeh, so i felt ill but was okay after it had exited my system (like about four toilet visits over an hour....):(

strangest thing of all is the next day I cooked the sauce again for about 23 mins, and cooked it for so long that the cream virtually evaporated and i added some more butter, and it was delicious and i didnt feel ill at all.

still i regard the incident as an epic fail. I blame the meat.:(:(

i'm stealing invisibleplanet's tea from the other night - brocolli & blue cheese soup and chicken/prosciutto/asparagus/potato/cream thingy

You cooked the sauce with the lardons again or just the sauce? If with the lardons, youre very brave! Thats strange, I can only assume it was the meat or the cream but if you used the cream again the next day and were fine... How odd.

yep i cooked the sauce with the lardons. It wasnt the cream, it was fine. The episode hasnt put me off cooking carbonara again, but I will use bacon next time - or strips of pancetta

odd logic there! i use them all the time. did you fry the pancetta before adding it to the sauce?

If you were ill straight after eating the dinner, cheesy, it was bugger all to do with that meal (which would explain why it didn't make you ill a second time round either).

Got the kids back this evening and we're having cooked cubes of pork leg fried with some soy sauce in pitta with salad and mayo.

You would notice if pancetta lardons weren't right really - smell, taste, appearance - surely? You certainly couldn't blame them after wolfing down the whole meal and not noticing anything amiss then and there. This story whiffs, and not in a good way.

More curry here tonight, albeit it's my ma's curry mutton and more roti. Bloody lovely it'll be, I'm sure.

i think i shovelled it down too quickly and i was in a nervy mood, true. But i suspect it WAS the meat - even though i fried it for like 15 minutes before adding the cream, i suspect it wasnt fully cooked  The second time, it was cooked the bijeipers out of, and thats why i didnt get sick.

Cheesy, stop speaking balls. 1f you cooked small cubes of pancetta for 15 mins, then simmered it in hot cream and let it rest in hot pasta it would certainly be cooked.

You did not get sick from that pancetta unless it was severely off to begin with. But then you'd have had the observational skills of a dead stoat not to notice the bulging packet/rotting smell/slimy texture etc.

that doesn't make sense.
did you drink less booze the second time you ate it? :p

oh tarranau, how your scolding hurts my feelings:(

Come on Cheesy - you need to do better than that nonsense. Unless you were using a toy cooker in a wendy house I stick by my post above.

:D

i honestly cooked the pancetta for about 15 minutes, i am a paranoid type that is paranoid about meat being undercooked. Absolute hand on my heart on that one. Could it have been the mushrooms? I do think i had a 'bad stomach' kind of hair day though. Ms Spangles could be right, sort of
