What's for tea tonight? (#8)

First tea was more a snack really. Some giant cous cous with some left over chorizo, peppers, onions and a handful of fresh Broad beans. Was bloody lovely. Wish I'd made more... Would have certainly done for the main meal.

I've had a pre dinner snack of chicken mini sandwich using the end of the loaf of bread and half a packet of giant Parma violets :oops: I'm not sure what I will have for actual dinner!
 
Mackerel baked with Irish dilisk, sea salt, black pepper, lemon and olive oil, with roasted tomatoes in garlic oil, cold avocado and sweet potatoes, tarragon mustard on the side. Strawberries, raspberries and yoghurt for dessert with a gin and tonic...perfect in this heat and nice start to an evening at The Abbey theatre, to watch the stage production of Emma Donoghue's 'Room.' Fun fact: her dad taught my Dad English years ago in UCD, also my own alma mater.
 
Tinned pink salmon, cold sweet potatoes, tomato and iceberg lettuce salad with garlic oil, beetroot slices, fresh brown bread with butter and coriander and lemon hummus. A lot of healthy taste sensations going on. Strawberries and yoghurt for dessert, and two Sees candies.
 
Braising steak cooked in smoked stout with ginger and star anise then finished on chargrill. Beluga lentils cooked in same stout. Chargrilled carrots, yogurt and dill. White radish, cucumber and dill in mirin/vinegar/sugar dressing. Green salad.

More of a faff than usual but I had the time and it was nice just pottering and cooking.

Something easy I can cook with one arm, so probably something orange I can do in the oven, maybe pies and potato products with peas.
 
What's up with your arm ringo?

Last night was a chicken, potato, spinach & courgette curry.
I was a bit :hmm: about adding courgette to it, but it needed using up so I grated it in near the end of cooking and it worked really well.

Fast day for me today and I've got an M&S veggie moussaka.
