What's for tea tonight? (#8)

Chicken Dijon from Cook with rice and leftover roast veg from yesterday

Meringues made by my aunty for after (best meringues I've ever had tbf) :cool:
 
Friends mum put on a birthday tea for friend. Had asparagus, cherry tomatoes with chutney, chicken, ham, biscuits and fruit. Rest of birthday cake. Trying to decide if am still hungry but shattered so think ill go to bed soon.
 
Sounds interesting - what do you add apart from those three ingredients?

MACKEREL & LEEK PASTA



SERVES 2 » PREP 2 mins » COOK 12 mins



Cook 200g pasta shapes, such as farfalle, following the pack instructions. Fry 1 thinly sliced leek in 1 tbsp olive oil for 5-10 mins until soft, then stir in 250ml hot vegetable stock and 2 tbsp grainy mustard. Bring to a simmer while flaking in 140g smoked mackerel, then stir through the drained pasta.
 
The curry I didn't bother making last night - chicken thigh meat (instead of the eggs I'd planned - decided to keep them for lunch as I have various egg-compatible bits in atm), chickpeas, spinach & aubergine in a tomatoey yoghurty sauce. Cauliflower either in the curry, roasted separately with spices, or chucked in the bin depending on how manky it is :hmm: Kachumber to go with it (Thimble Queen :thumbs: ) and I got some mini garlic & coriander naans for cheap so prob one of them too.
That should do me for teas through til Sunday or Monday. (Or possibly Tuesday if cooking takes ages and I just have fruit for tea - I'm still in Tesco atm :facepalm: )

Curry's still cooking :mad:

I got a couple of fish pie ready meals (the ones meant for toddlers lol) for fuck-all in Tesco though, so ended up having those with some lettuce for tonight.
 
I've just gone and got more Red Leg rum. Fuck me but that's good stuff.

The gin is Brockmans - I've already started so I'll be under the table in a couple of hours. :facepalm: :D
