What's for tea tonight? (#8)

Simmering courgettes for over an hour? What are you simmering them in?
In with the veg tomato stew. For some reason they're made of concrete. At least I can fish them out and chuck them if they remain obstinate. :D

I'll give them another hour and a final chance to behave...
 
You could try fishing them out and boiling them in water for a few minutes then adding them back in again?
Too much faff - chucking then would be easier. At least I'm taking half of this to work tomorrow so nuking it in the microwave should help sort them out. :)

Who knew courgettes could be so awkward?
 
My summer squashes are supposed to be courgettes when small, but they'd got too big before I realised they were producing at all - still like butter though when nuked - I think I ate the skin last time.

In fact I think it's squash for tea since the runner beans are running out ...

Just in after cycling 25 miles and waiting for the bath water to heat, so having the last of my weekend loaf, tahini and alfalfa/radish sprouts with some V8juice.
I may make a mug of hibiscus / amla antioxidant tea.
 
After over two hours cooking time I've stopped and it's ok, albeit with slightly crunchy courgettes. Next time I'll boil them separately and chuck them in ready cooked...
 
Smoked mackerel, (shop bought) potato salad, bulgar wheat salad, spinach, tomatoes, hummus, buffalo mozzerala. Sounds really healthy but i reckon some of it was quite fattening. And delicious. Small wedge of choc orange ganache cake for dessert.
 
Enchiladas, baby spuds with garlic butter, broccoli and carrots.
Fresh peach marinated in Amaretto with a dollop of raspberry ripple ice cream.
 
had cod and sauce. White sauce with herbs and a hint of cheese. It was that good I even ate the skin. Could have done with some new potatos to accompany it but je suis skint. Mopped up the sauce with bread instead. Good old bread. You know where you are with a slice of bread don't you? It's just bread, no fancy airs about it or complicated procedures. Just a flat sponge to take up that sauce. I'm still determined to have proper roast spuds n onion on wednesday though. Bread is a stalwart, but it cannot compare to the glory of roasted spuds.
 
It was cod from the reduced section as well so I didn't have to feel the crushing guilt of contributing to the death of an entire species.
 
I nuked the squash for 5 minutes, then added soup and half a pack of Quinoa, Lentils & Wheatberries, milled flaxseed with goji berries, tahini pine nuts ...

Really not sure I'll bother growing squash again - no doubt it will do me good eating it skin and all, but it was a bit cotton woolly - quite sweet raw - even a hint of watermelon about it....

I definitely prefer runner beans.

Perhaps I'll plant purple sprouting broccoli or cut and come again kale next year ...
 
X came home from being on the lash for two days and ate mine and the the kids take away leftovers we were going to eat tonight. Another fucking row then probably :(
 
Spent 7 hours making black bean soup with a mole sauce on Sunday. By the time it was done I'd gotten so hungry I'd eaten enough corn chips, salsa, and left over chocolate cupcakes that I'd ruined my dinner. So tonight: black bean soup.
