What's for tea tonight? (#8)

Definitely no dieting around here! :D

Today was same as yesterday - roast chicken done with five spice and a gravy I made from a marinade of chopped ginger, garlic, soy sauce and oil. I rubbed the marinade on and under the skin with a little butter, and then sprinkled the five spice all over the top; the bird rested on a bed of parboiled carrots, onions, celery and red peppers. The homemade gravy was delicious, served over the meat and veg with a side of sticky white rice with minty peas (leftover from day before). The fresh buttery mint flavours complimented the Chinese spices really well so it was a good gamble. :thumbs:
 
I've got my cooking mojo back!

I fried some onions, garlic, red and yellow peppers and mushrooms with some chorizo, cumin and smoked paprika. Then I threw in cooked brown rice and some juicy tiger prawns. It was delicious :)

That sounds seriously good! Chorizo is great on its own, or with prawns, it doesnt need chicken or any other meat at all. Good job with the peppers and mushrooms too. I sometimes make a chorizo stew with your ingredients (minus cumin), but a lot of red - onion, tomatoes, peppers, wine, chilli, sweet potatoes and smoked paprika. Delicious with a green salad and crusty bread!

We'll be on easy-peasy shell pasta and LG sauce I expect. Round dad's again. I'll be fucking glad when he starts getting some muscle strength back again and can get out and about on his own, cos am shopping for him every day at the mo and visiting for an hour every night, so when I do get home I'm not in the mood (and way too hungry) to cook anything decent most of the time.
 
Last night I made smoky (liquid smoke :thumbs: ), creamy greens with cannellini beans, garlic and chilli. I really overcooked the greens so they were probably devoid of nutrients but were really soft and lovely.

Tonight... been pressing some tofu and marinated it in gojuchang, rice vinegar, soy sauce and sesame oil. Will probably just fry with greens and noodles.
 
Pesto chicken, green beans, pot of instant bulghur wheat and quinoa with tomato, olives and basil. Vanilla yoghurt.
