Burger Thread. Yes!

Now I'm thinking about egg n breadcrum spicy breadcrumb coating some lardons, deep frying them and serving them with a plain cheeseburger. Be a right fatty beast of a meal but I think the idea has merit.

What are acceptable burger condiments?

Me. Ketchup. Mustard (French's American Mustard natch). Will at a pitch add a minor amount of mayo. Chili. Relish (have a jar of Jalepeno chili relish that is running v low). Gerkins. Onions. Cheese (must be emmenthal.) If there is green stuff it should be rocket.

Basically my perfect burger at the moment is aforementioned relish, mustard, gerkins, raw onion, emmenthal cheese (melted, blates), and rocket on a ciabatta bun. And I am about to make this.


I don't really business with salad except for the little small slice of gherkin. Just red or bbq sauce. No mayo. Mayo can be on the side to dip chips in but it feels like an impostor if its in the bun

not really on for any chilli in there. I like chillis in their proper place but the joy of a cheesburger is the rich meat, cheese and bread taste. I feel chillis would dominate, like a guitar player playing too loud and drowning out the more subtle flautist

i feel this way about bacon on a burger (in addition to the overly chewy texture and overkill flavour)

me. MUST have Cheese - ideally processed plastic stuff but cheddar or swiss cheese will do i guess; onions: raw, grilled or fried (not onion rings in batter, or US 'crispy fried' though as these are dried onions, just use the real thing - all good; gherkins: also essential, preferably sliced, not a huge one dolloped awkwardly between the meat and the buns :confused:; slices of beef tomato, iceberg lettuce, mayo, ketchup or burger relish, and mustard (I like strong English rather than American, but that or Djion are also fine...). And a strong bun that holds the lot together. I do like brioche style, althoygh that is a bit too sweet. Thats it. The idea of these flavours (such as the iceberg lettuce, and the simple, milky cheese), and holding the bacon allows the meat patty to have the starring role it deserves, so it really is all about the burger.

As I've gotten older I've found I like salad in my burger. And things like blue cheese. Jalepeno to me doesn't dominate it just gives everything a delicious kick. Mind you I made cookies the other day and I made them with chili.

My MiL got sliced emmenthal the other week from Aldi and it's perfect.

What kind of freak doesn't slice their gerkins. Finding a whole unsliced gerkin in my burger would be like find the proverbial cock on a "woman" during foreplay.

I spent a couple of months without colemans a while ago, and once I had it again I simply couldn't bare it. Too too much.

I am pretty fluid with toppings and such. The cheese is pretty essential to me. I do like bacon (sorry Cheesy) on my burger, in fact my default burger is cheese and bacon.

Onions are good whether raw or fried but I am not that keen on slices of tomato on it. Do like a bit of salsa or tomato chutney but don't go for it that often. Lettuce is okay but would not add it myself, same goes for gherkin or chilli.

One key thing for me is the bun. I really like a soft white floury pay. Ideally toasted on the insides but soft on the outside.

then american is your go to for me. To be honest after my 1st Colemans attack I suddenly went from loving it to hating the stuff.

I love tomatoes too, but if im gonna have them on a burger, i want big juicy vine ripened tomatoes or RED beef tomatoes. Even good tomatoes can be a hindrance to eat on a burger (especially if cut too thick). I disagree on the lettuce though - think of how long it takes to eat a burger - if the lettuce is really fresh and i mean REALLY good fresh stuff that is shredded, the heating affect will be in your mouth before you know it. As far as lettuce per se, i stress, not that dark greengarden stuff that goes slimy pretty quick -no one wants that on a burger! What green do you suggest? Rocket is WAY too posh....

Burgers are one of those places that I dislike tomatoes. Too many memories of flaccid red water holders.

Even good tomatoes can be a hindrance to eat on a burger (especially if cut too thick). I disagree on the lettuce though - think of how long it takes to eat a burger - if the lettuce is really fresh and i mean REALLY good fresh stuff that is shredded, the heating affect will be in your mouth before you know it. A bag of rocket is the same price as mixed salad bag in any supermarket. It's not posh anymore.

Though that remind me of the time just after we moved to London, and on impluse decided on a particular pasta prawn and rocket dish. We had all the ingredients just needed rocket, but the nearest shop between where we were and the tube home (on a sunday) was Harrods. We walked in and joked that Harrods might have rocket but itd have a posh name.

And then we found roquette....

Rocket IS posh!!! (no matter how great it tastes). Dont matter if its the same price as lettuce, its fancy and fancy is bad news with burgers.
 
I would have:

Ketchup or tomato relish of some kind, gherkins, fried onions, mustard (american or grainy). cheese should be something melty - gruyere, emmental or suchlike. Does it need anything else? I don't think so, although I'm always willing to experiment.
 
I'm not a fan of raw tomatoes in anything so no sliced toms for me please, I get my burger tomato hit from sauce or relish. I don't mind if the relish has a spicy kick to it.
I like a bit of peppery rocket in my burger and some thinly sliced red onion.
Cheese - plastic or sliced cheddar is fine, but my favourite is a slice of smoked cheddar (from Aldi)
 
I like using cherry or mini plum tomatoes but don't much care for great thick discs of beef tomatoes. They end up the same way of bacon in that you need a sharp bite or it just pulls the middle out of the burger and makes a ruddy great mess. Mayo doesn't float my boat cos there's generally enough fat from the burger and your bun is that dry it needs it then the bun is wrong.

Rocket is not posh.

it's the same price as lettuce. Its wildly available and can be used like lettuce. Rocket was posh like 10 years ago.
