Monumental barbecue win yesterday.

Good quality lean steak mince formed into 9oz burgers, no egg needed. Just a little salt and a fair dose of black pepper.
Thinly sliced chicken breasts marinaded in Nando's garlic, herb and peri-peri sauce. The restaurants are shocking, but the sauces are excellent.

Barbecue piled high on one side only, face-meltingly hot. My backyard engineered, brick-built 1m wide grill makes that easy, not one to be attempted on a disposable in the park. Here's the grill first in it's passive state, then in it's happiest time cooking giant ribs :)

Burgers cooked as far away from direct heat as possible; lid closed with a big handful of hickory wood and whisky barrel wood chips so the burgers were effectively being smoked, which keeps them juicy, full of flavour and lovely smokiness. The chicken was flash cooked over the hottest part to sear in the marinade.

I'm not a fan of burger relish - instead, I went with just a dash of habanero hot barbecue sauce. Topped with american plastic cheese (rubbish but it works on a burger) and a handful of crispy fried onions, served on an ordinary (large) fresh bun.

Garlic, peri-peri, habanero barbecue sauce, crispy onion, cheese, crispy chicken and hickory & whisky smoked soft beef; it's a right mish-mash of flavours and textures, but YES.

Actual bacon.

Honest Burgers meat is supplied by Ginger Pig - some of the best in the country.

I wholeheartedly agree with Ms Shifty - Honest Burgers are incredible (as are their rosemary tripple-cooked chips). The meal is totally worth the 12 quid or whatever it is you pay for it (with drink...).

Today i have been hungover and travelling, so had a fry up for breakfast, scones with clotted cream for lunch, ice cream, a steak slice and......a delicious Whopper with cheese meal this evening. Wish i could eat like this all the time....

I sometimes get Ginger Pig smoked back bacon for indulgent weekend breakfasts as there's a shop near me and I can't resist in on a friday afternoon, it's my greedy treat and it's amazing.
I'll also buy their chickens for special dinners but they have to be pretty fucking special as one of their chickens cost around £12. They taste utterly amazing, like no other chicken I buy anywhere else and they are worth the money if you use all of it (I can get three meals and a soup out of that so it's not so bad). They taste incredible. Like proper chicken.
They used to do some sausages I liked but have stoppend making them now. I'm so not keen on their regular sausage selection, I think the Giggly Pig might be better for those...
