Burger Thread. Yes!

chinese style pork burgers from the local meat place at Carr Farm (not that far fornm us but fucking miles from london)

omg.. they are luverly. we bout 6 of them with the intention of having two for tea last night and freezing the rest.. the other 4 got eaten for lunch

I've got my beef burgers down to a tee (t? tea?), but bought some venison mince the other day :D

Anyone got a tried and tested recipe for venison burgers, not sure how different venison is to beef and whether it'll need a binder? :confused: also what sort of herbs to go for?

I have not hand made them but I ususally trust the BBC site for recipes.
I think the panchetta is because venison is not fatty or saltly.

I would steer away from adding too much to the patty and and the flavours in around it (like in relish and stuff).
 
Yeh I've never made them, only bought ready mades.

Have a look at the ingredients list on Waitrose ones?
...seasoning, spices, herbs :D

not making them for a while yet, but you know me, like to be prepared. A couple of recipes have got corriander and cumin added, not sure if (like kittyp says) it might take away from the flavour? I add paprika to my burger mix.
 
want me to ask the nice people i got my chinese style burgers from?

they do all sorts of stuff including venison burgers. i can ask them how much fat to add.

Anyone else a bit unsure of the whole 'pink' burger movement that's been sweeping the globe over the past few decades? :hmm: I mean, I like a bit of pink meat as much as the next man FNAR but I prefer brown a whole lot more FNAR!

Do you look confused/disgusted when asked 'and how would you like your burger cooked, sir?'
Do you bawk at the hint of blood in the juices as you bite into your burger?

I do. Call me old fashioned but hey, I know what I like and it aint pink in a goddamned burger :mad:
 
I was just thinking it looks horrible :D

I do really fancy a burger, or some meat though... I've had an apple for lunch and we have soup for later :facepalm:

Indeed it does! Look at it....if the tomato was more visible I'd be licking the screen right now. American cheese as well, nice....nice. I am going to go and make a chicken burger now. Nice and simple.

Southern Fried Chicken Fillet
Mayo (with fresh black pepper cracked in it)
Lettuce
A slice of Burger cheese (yes, I have burger cheese....think it's american but its not as yellow as the above so...hmmm..)
Sesame seed bun
