All Things Pudding

With the turn of the season, and a determination to make all my own puddings/cakes to save costs/avoid unnecessary preservatives etc, I am obsessing a little over puddings.

So far it's been restricted to bramble crumbles, apple crumbles, and muffins of various flavours. Now though, I'm hankering after the likes of rice pudding, baked apples with spicey/brown sugary fillings, jam roly poly, syrup sponge, jam sponge, all the deeply satisfying hygge kind of afters.

What are your favourite puddings, and what do you plan to make over autumn and winter?
 
Not baked any afters type stuff for years - used to bake regularly but stopped for some reason. It's easier to buy them ready made nowadays - saves on the cooking costs.

Yebbut, I'm trying to save money and not put chemicals/preservatives into my body. The price of cakes has rocketed lately - I can make a batch of muffins for buttons and they last all week.
 
I'm struggling to think of a hot pudding I don't like.
Nope there isn't one.
Love hot chocolatey puddings with cold cream.
And anything fruity with hot custard. Pudding wise this is my favourite time of year.
I don't bake much in hot weather, but I'll be going down the pie and crumble route soon enough.
 
Ooo, I will look that up, sounds intriguing.

I found this recipe for treacle pud, they take a fair amount of time and effort on the hob, making sure the pan doesn't boil dry etc. and while this probably isn't quite as good, the idea of having pudding ready within 10 minutes of thinking "ooh I fancy a pudding" and using a lot less energy is very appealing


Also want to try this self saucing pudding (I prefer chocolate puddings, not having a sweet tooth I do prefer the bitter notes of chocolate!) - however I would switch the water that you pour on top for coffee as we all know coffee enhances chocolate flavours in baking.


I haven't made either of these yet, but they are on the list to try.

Oh I realised when I started looking at microwave recipes that most US microwaves these days are 1100W which is a fair bit more powerful than mine, so if using a US recipe you'll need to increase the timings for lower rated microwaves.
 
My hatred of custard means I've never enjoyed the 'school dinner' end of the pudding spectrum. My preference is for booze-roasted fruit - baked apples stuffed with dried fruit or mincemeat (the sweet one!) and a slug of calvados; roasted pineapple slices with dark rum and demerara; baked bananas with orange zest, cinnamon and white rum; roasted figs with honey and pistachios and ginger wine. All with a dollop of vanilla ice cream.

They do sound fit as fuck, but I don't keep booze in these days polishes halo

Although having said that, I am making blackberry brandy, and intend to puree the blackberries once it's done, to use for puddings. There's every chance they could end up in a baked apple.

sounds utterly delicious but I'd prob have custard as well as ice cream
 
When we went on a Norwegian cruise trip, the only time I've been on a cruise ship, everyone seemed to be enjoying the vast array of tiny fancy cakes from the self-serve buffet, but I always made a bee line for the sponge puddings and massive vat of custard with a ladle bigger than the pudding bowls.
 
I haven’t researched at all but apparently I can make cakes etc in my new air fryer.
So think I’ll try some loaf cakes and crumbles.

I’m fat though and need to eat less pudding not more. 😄
 
Here is the recipe- does that sound better? It's a great stodgy pud!
I'm looking at a recipe that says custard, not bechamel.
Custard definitely sounds more appealing than sweet bechamel sauce! :thumbs: (Custardy and appley I can absolutely get behind. Mmmmm.)
