There are about a dozen trotters in a bowl with this sweet lipnumbing Szechuan pepper sauce that tastes lush. The texture is like the fatty bit of pork belly. You need to do a lot of gnawing and spitting out bone and gristle, but it's worth it as it tastes incredible.I am not sure I could eat a pig trotter
