What's for tea tonight? (#8)

Had the parmigiana last night... meh. I love aubergines, but still disappointed by this dish. Will eat the rest of it, but won't make again.

Did some baked spuds and scooped the insides out and added cheese, egg, red onion and parmisan. Been a long time since I've done this, was really nice, need to do it more often, but making sure I've got bacon in stock next time.

Ohhh I was just wondering how I can incorporate some bacon into a tea this week. I thought maybe a pasta dish but loaded tater skins is a great idea. Ta :)
 
Wholewheat penne with spicy turkey bolognese, kale. Mango, papaya & passionfruit flavour yoghurt after.

Last time I made the bolognese it was disappointingly bland. Definitely not the case this time :cool:

Turkey mince works surprisingly well. I did a big batch for the freezer recently with 60/40 turkey beef and its great for lazy meals.
 
My son had an interview for a school IT technician apprenticeship today.
I, quietly, had a good feeling about it :hmm: but we've been out of luck, lots, in recent years - and he's suffered a fair bit down to that, too - so it was also a bit much to hope for :rolleyes: - and I had told him just to see it as good experience in terms of *proper interviews* above everything else and to be prepared to have to keep applying and be in it for the long haul - so if anything, it was frustrating that the *perfect* fit was the first one we applied for.
Not only did he get it (out of seven shortlisted candidates) but they told him he was by far the best candidate in every way! :D I am SO fucking made up :cool:
He has never quite fitted the requirements that education places on kids but he is bright and engaging and driven when he's interested in something and this looked SO perfect for him in every way (cos it's also not to say that he didn't enjoy the nurturing part of the school environment either - he just falls apart when it comes to exams etc).
So we are getting a Chinese tonight - and they can order whatever the fuck they like :thumbs: (actually, his sister and I had already decided we'd get one whatever way it went, cos I was already proud of him just for putting himself out there - it was a dead scary three part interview, too :eek: )...woohoo!!! :D :cool: :D
