On the other hand, the thing I miss most as a veggie is choice itself. My heart sinks when I see a lonesome veggie choice on the end of an otherwise decent menu (especially if its of the veggie lasagna, something with ricotta and spinach, risotto, etc. lazy type).IME loads of variety on a menu in a pub means it's all shit. Better to do less choices and do what you do we'll. Using that rule the few people who want veggie food might mean they actually get something that tastes nice.
I'm happy for there to be just one veggie dish - so long as some thought has been put into it.
For example there's a French restaurant / pub near by to here. I'm very impressed by their veggie option (especially as the French are not know for their veggies!). They do a flan - tomato, basil and mozzarella. However the basil comes in the form of a scoop of sorbet.
Often the veggie option is an afterthought but this place clearly has put effort into making a good dish.
